Black color, with compact head. Interesting aroma, mild, of wood, roasted malts, light sourness. Excellent flavor, dark malts, chocolate, with just the perfect combination of wood, firewood and moderate sourness, leading to a mild astringency; some sweetness appears in the final, indeed increasing the complexity.
Wonderful beer.

Side to side with the unoaked version

Black color, with almost no head, just some spare bubbles. The first note in the aroma is alcohol, then followed by biscuity and toasted malt notes, finally by very light malt sourness and cheesy yeast. Low carbonation, therefore, smooth and round mouthfeel; good flavor of roasted malt, some dark chocolate, strong hopping, although the moderate roastiness partially hides the qualities of the hop; it has also some flavor of rhubarb candies (or Rabarbaro Zucca digestive); it seems a bit sweeter (and therefore more balanced) than the unoaked version; the light alcohol note adds a quid to an already good beer.
Excellent.
Next time maybe a Calvados version?

2013-05-31. Dark brown body, nice creamy tan head. 4+ Aroma of tart fruit and alcohol up front, dry malt behind. Sour cherry like accents. Flavour is quite tart and tangy up front, moderately alcoholic, fruity notes. Average plus bodied palate, good amount of carbonation. 3+ Enjoyable. The sourness is such that I am not entirely sure it’s on purpose, but if it is not it kind of works for it! Bottle listed only as Triple Brune on the program but was apparently the barrel aged version at Mondial de la Biere 2013, Montreal

33cl Bottle, as La Triple Brune IPA Mûrie en fût, thanks Eric! Dark brown colour, thin khaki-beige head. Aroma of wood, balsamic vinegar, vanilla, tart dark fruits, some roasted malts. Flavour is medium-sweet, malty, dark fruits, balsamic vinegar, oak, dry and woody, tart-bitter finish. Medium-bodied. Don’t know if it was intented, but this tasted like a good Flemish Brown ale, in the line of Goudenband. Really nice.

33cl bottle courtesy of Thibault. Acajou, col beige tirant sur le café au lait. Arôme est boisé rappelant le chêne français avec un bouquet sympa de vin et un bouquet rétro-nasal rappelant de trop une vieille eau-de-vie qui enlève un peu du bouquet original de la triple brune. Palais présente ici aussi un alcool bien relevé et de suite notable qui alterne des notes vineuses et plus alcoolisées. Je note ce côté boisé, chêne avec un léger résiduel vin et petit alcool qui couvre un peu le profil de la bière de base. Effervescence moyenne avec une fin de bouche restant très dans le style français surtout au niveau des houblons qui dégagent un léger citronné. Malté est ici entre caramel avec qcq notes grillées et un petit côté sucre brun. Un bel essai, mais dommage que le chêne couvre ici l’intérêt de la bière; les houblons de cette Black Ipa. Nonobstant de ce traitement en chêne qui pour moi couvre de trop la base originale de la bière, cette dernière reste très agréable à déguster.

Bottle from Cave à Bulles. Pours dark brown with no head. Aroma is dark fruit with a lot of wood. Flavor is slightly sour and definitely wood, seems to be oak. There’s some sour mash aspect (tho maybe that’s extreme for description). Finishes pretty sour and astringent - the oak comes over as a bit dark/musty. All in all a pretty tasty thing.
