A complex Belgian farmhouse ale brewed in honor of a lost beer legend, Walt Powell.

Saison de Walt is produced using a split fermentation with part taking place in a modern stainless steel fermenter with a Saison yeast strain, and part spending a couple of months in a wine barrel to be further conditioned by wild yeast strain Brettanomyces, lending a classic earthy, complex and sometimes almost smoky aroma and flavor. The two are then blended and Styrian Goldings hops, inspired by Walt’s favorite beer, Orval, are added. The Saison yeast produces a very dry beer with lightly fruity and peppery flavors which are enhanced by the addition of pink peppercorns in the brew kettle. This blends with the earthy Styrian Golding hops and barrel aged “wild” beer to make a subtle, yet complex ale that is light straw in color and very easy to drink. I hope every time we enjoy one we will be filled with fond memories and fun stories about the legendary inspiration behind it.

Tap at the brewpub May 2014 Pours bright lightly hazy yellow hue with a nice soapy white head and some sparse lacing. nose is very hoppy, lite musty notes, and a bit of brett. Reminds me of Tank 7 alot from Boulevard. has very similar characteristic to it. lost of hops on the flavors with some nice yeast quality and lite brett character. this is an awesome flavorful session saison on the utmost degree!!! next time im in this area, I will definately stop here again!

Golden yellow body and small lasting lacing. True saison farmhouse yeast, French in appeal, with just the right (Saaz?) hops and sweaty malts. Light warming alcohol, just very Aromatic and tasty yeast, light bitter, soft sweet ending. Very tasty, perfectly executed. A great saison from America? Surprise, it exists! (On tap at Flix Brewhouse)

Pours blondish cloudy golden with a white head. Aroma brings the styrian hops and some sweet Belgian yeast. Flavor brings some light, crispy wheat like malts, peppery saison flavors, and a bit of buttery toffee notes. The hops are noticeable as well on the palate.

Hazy golden with a white head. The aroma and flavor are great. I get a ton of brett notes as well as a good bit of peach and apricot notes. There is also a good deal of biscuit malt and yeast. Medium mouthfeel and medium carbonation. Very nice saison.
