3.1 AROMA 8/10 APPEARANCE 4/5 TASTE 5/10 PALATE 3/5 OVERALL 11/20
From notes. First reviewed 3/8/2011. 2009 Collaborative Evil served on tap at Flossmoor Station in a 12 oz. stange.
The beer has effervescent apple cider edges with a murky brown center. A small off-white head arrives already fading, leaving just a bit of lace down the glass.
Soft tart cherries, vanilla, oak, bourbon, caramel malt, and a little bit of vinegar all coexist in the aroma.
This is exceedingly sweet. Bourbon, caramel malt, and oak come through first, with vanilla pushing through next. Some tart cherries and acidic tannins push through with some vinegar at the end.
Medium body, medium carbonation, a little bit sticky, with an acidic feel at the end.
This is too sweet to easily even make it through the first glass, although the complexity is nice.

3.4 AROMA 6/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 15/20
hazy copper, tiny off white head, some lace. nose of dried fruit. sweet malt flavor, dried fruit, and a bit of barrel woodiness. medium bodied, dry finish. a bit too high in alcohol to enjoy much more than a small sample. this one is better enjoyed at the dead of night while safelt ensconced in my home office.

3.8 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20
Very, very dark and oily orangish pour. Nose is huge wood and bourbon. Flavors are strong bourbon, oak, vanilla, roasted barley, dark juicy fruits, plums, raisins, etc., with a huge alcohol presence as well. Texture is substantial and unctuous...oily and vinous. Excellent example of what a barrel can do to/for a beer.

3.8 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20
Sample at the brewpub. The beer pours a clear ruddy orange color with a medium thin off-white head that dissipates steadily. Thin strings of lacing on the glass. Aroma of fruit and oak, plus some grainy malt. Medium body with a woody character and flavors of ripe fruit, grainy malt and vanilla. Some yeast character as well. The finish is oaky and fruity with a dark malty aftertaste. Above average overall.

3.5 AROMA 8/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 14/20
Draft on tap at the brewpub (Flossmoor, IL). Missed this at FoBAB 8. Pours a hazed dulled golden hue, a frothy offwhite head sits atop and dies to a small film, laces small. Aromas are rich spirits, warming Bourbon, vanilla tannins and wet oak, crisp golden bready malts, pear and apple shine through small, vague sweetness, touches of spicey yeast. Initial is a big bourbon presence.. It seems as though Flossmoor gets a great barrel influence from their barrels: wet oak, warm spirit, vanilla, and sweeter apple per and bready malts, grains, lightly spicey yeast shines through. Light and airy, lighter bodied, the barrel is thr focus, the yeast and light fruit esters from behind. Mellow warming finish, lightly bitter, lingering sweeter malts, yeasty spice, and warm barrel schtick. Quite nice, Belgians and their florals, touches of orange and rose blossoms, light bitterness. Ok, the base wasn’t my big thing.. But it’s nice, the barrel gets a big hold
