On tap as .357 Brett at the Station. Pours a murky bright orange with a thin beige head. The brett is strong with this one. This is clearly that type of brett that comes off as real cheesy. The best examples that use this strain are really simple malt and hop bills because this yeast is all over. .357 doesn’t keep it simple and a lot of these flavors are muddled. That aroma is strong in cheesy, lactic, lemon, mango, herbal hops, hay, apples, and all around funkiness. Similar flavor notes. The acidity is bordering on harsh. But its juicy and still pretty drinkable despite that high abv. Decent.

For one the base beer is waaay off style, and 2 this beer just really isn’t that good with the extra yeast treatments.

Draft at Fobab 10. Pours a lightly hazed pale gold with a white head that falls. Nose is hugely brett. Some alcohol as well. Loads of cherry & pineapple in the nose, earthy as well. Faint malt profile. On tasting, it is quite bitter overall. Brett heavy, lending a strong dryness. Minimal acidity, faint tartness perhaps? Kind of an oddball beer overall. Very brett heavy.

Sampled FOBAB ’12 - caveat up front that I tried this one pretty late in the game once some awards were given out, but since I’m on a rare roll with rating beers, not looking to fight the movement...anyway, this one poured a marmalade color with a thin white head. Aroma is odd and pretty intense with a lot of funk going on...again, I remember it being odd, but inviting. Flavor was, well, more odd - very funky and bretty with some hop notes in the background...I wish I could have reallly placed more on this one, but it was a conglomerate of weirdness. Palate appropriate for type of beer (whatever that is). I guess I’d try this one again sometime, but I do agree with some others that this one seems a bit ’messy’.

big toasted melon, a touch of old rotten wood, dirty old sock brett, old grains, wet wood. complex, but some off weird funky notes that weren’t my cup of tea.

Draft at the pre-Dark Lord Day event, 2012. Pours a semi-cloudy orange-gold color with a big white head that dissipates quickly. Notes of apples, lemon citrus, barnyard funk, oak, vanilla, sweet malts, straw, white grapes, and a little bit of cheesiness, too. Medium-bodied, with medium-high carbonation and a funky, tart, sweet, malty mouthfeel. Interesting experiment that I think mostly works.

UPDATED: APR 30, 2012 Draft on tap at the brewpub for Pre-DLD 2012(Flossmoor, IL). Pours a rich glowing orange hue, rich and glowing with some haze. A frothy bright white head dies to a frothy ring. Laces small. Aromas are funky and fruity, pears and crab apples, bananas and some gentle citrus. A melange of tropical fruits, bretty funk cobwebs, and some cheese. Dryness hits with some good funk, fruit, and some gentle oak. Vanilla, sweet tarts. Initial is lighter end offering a rich cheesy funk, some sweet tarts, bready malts and crab apples. More cheesy, prickly dryness, and some oak. Running cheese elements, funk, cobwebs. Dust, sweet doughy malts. Some funk, dryness. Rich sweetness in but lots of funky brett starts to take over and envelope the palate. Ok, a bit sweet at times likely due to the Imp Pils base they put in the barrel. Still, it’s much improved over regular .357, a beer that struggles to find a place. Nice wild experiment... perhaps some more time could really make this something. The nose is it’s strength, a bit more time to clean it up.. and the whole beer could just be a winner.
