[A] Lovely vanilla bourbon smell over chocolate stout character. Roast. Molasses. Caramel. Earthy wood. [A] Pitch black beer with a nice brown head, into $6 snifter. Ruby as the glass runs low. [F] The bourbon barrel is quite mellow. Not overpowering. Caramel. Molasses. More earthy wood. Tastes like it smells, I guess. [P] Fairly heavy, oily mouthfeel. Id say chewy. Low carbonation. Not a bad thing. Drinkability allright. Hoppy, coffee ground bitter mingle on finish. [O] Think this is the 3rd or 4th variation of Dark Matter. With Up All Night, and the Beers of Xmas. I dont recall enjoying it as much as this. Wonderful barrel aging. Thought it was about as good as Killer Wood. Not as drinkable, but Id still have a couple. Some people had some pretty bad things to say. I liked it.

black, slight tan head, lacy. nose of chocolate, bourbon, vanilla. flavor of chcolate and bourbon...good. medium bodied, sweet finish. interestying if a bit too sweet. on tap at the brewpub.

sampled at stoutfest 2010. poured by bryan himself (not that it matters)... close to black pour with a thin wispy tan head... enticing aroma of sweet malt, molasses, smooth chocolate and a nicely added bourbon and barrel component... flavorwise, this was much akin to the nose with a light bourbon essence, a fair bit of wood, and a very smooth profile of milk chocolate and coconut. full creamy texture with soft carbonation.... a very nice imperial stout without going overboard on the barrel. well-integrated.

Draft on tap at the brewpub (Flossmoor, IL). Pours a pitchblack opaque pour, a huge dark brown head in the snifter, very dark, with a good lace. Aromas are a nice blend of sweet malts, roasted coffee, a nice touch of oak and bourbon, vanilla tannins, sweeter cocoa, creamy sweetness, a touch of chocolate chip cookie. Initial is a good body, but not heavy, with a nice balance of bourbon, wet oak, and vanilla tannins mixing into roasted malts and vanilla, cocoa, coffee, nothing becoming cloying, instead blending very well into each other. Smooth and creamy, this barrel is light on alcohol but heavy on flavor. Caramel, cocoa, nougat, brown sugar, molasses, and coffee, the beer sticks to the palate with light bitterness, roast on the finish with a lingering smooth sweetness and kiss of bourbon. Sweeter edged, but I really dig the level of barrel aging and subdued booziness. This was an impressive one, thinned from the barrel but still full of flavor and easier overall going down. I personally think this could be a dangerous one. Great work by Bryan and Richard!

On tap at the brewpub: This was nearly black in the snifter, capped by a modest brown head. The aroma s a smooth blending of Bourbon, coffee, vanilla, chocolate, and thick molasses. Creamy yet somewhat warm mouthfeel. The flavor added a hint of coconut and a slight tartness near the finish. Very nice sipper.

3 or 4 pours at NOLA. Aroma is all those things that are great about a brash bourbon barrel aged impy, great balance for such bold supporting parts, oak, vanilla, chocolate, light hops, bourbon, roast. Flavor is exactly the same, plenty of bourbon but just on the point of being overboard, really well balanced for being a in your face bourbon impy. Very drinkable, love the oak. Great job!

Cask version at Night of the Living Ales 2010. Really dark and thick looking. Coffee and vanilla bourbon in the nose. Sweet in a good way but not overly so. Lots of coconut once tasted. I love when brewers coax these coconut notes out of their barrel aged beers. It adds such a great richness. Smooth and thick texture w/ just a bit of alcohol on the palate. Best beer there.

UPDATED: MAR 8, 2010 Bourbon barrel version of the Dark Matter Imperial Stout. Vanilla, chocolate, coffee, oak, bourbon, cream, brown sugar, molasses, all nicely rolled up into a creamy beverage that looks good, tastes better, and smells best of all. Some tart/sour hints in the finish... something obviously picked up in the barrel not present in the base beer. Appealingly creamy texture, seemingly a tad more robust than the non-BA version. Very nice variation on a fine stout, and proof, if any was needed, that we are in very good hands with Bryan at the helm of Flossmoor Station Brewery.
