COMMERCIAL DESCRIPTION
Our Disobedience is in the form of dark fruit, bread maltiness, and sugary sweetness from the added maple syrup. Complement this beer with dried dark fruits (think figs and plums), buttery and sweet cheeses, and fruit glazed meats.

A serious let down. I remember when I first tried this on draft I wasn’t impressed. I have two bottles, which I laid down. Just cracked one almost a year to the day of when I got them. Time did not mellow out this beast. Aroma was mostly belgian yeast, some malt. Flavor was mostly belgian yeast, and booziness. The booziness did not compute with the 7.6% abv. Perhaps this was stronger? Regardless, not a fan.

750 mL bottle shared at Slutfest 4. Pours a hazy red-brown color with a thin creamy tan head. Decent head retention. Aroma of banana, brown sugar, herbal hops. The taste is brown sugar, herbal hops and a spicy finish. Medium bodied.

Bottle at Paul’s for the Blind Stout tasting. Pours a hazed ruby amber with a thin to medium sized beige to white head. Big sweet floral candy on the nose. Medium bodied, soft sweet musk. Lots of phenols and musk, sweet fruity esters. Warming alcohol on the finish with a bit of musk. Long phenols on the finish.

On tap at Dexters, pours a clear dark copper with a creamy head and a little bit of lacing, the aroma actually reminds me of soap water that has a little bit of fruit coming through, awful, the flavor is extremely hot on the front end from the abv and there is a little bit of dark fruit in the finish, pretty much all over the place, ugh.

Shared at the Sunday After Thanksgiving Tasting 2012. Clear brown pojur with decent tan head. Notes of raisin, molasses, and nuttiness. Sweet and malty almost to the extreme. But also something a little off about it. maybe a hint of vegetal? Meh.

Racked on: April ’12, No. 003. 750 ml into a Chimay goblet. I purchased this in Frederick, MD over the summer. Roughly 8 months old at this point. A - Pours a clear but dark brown/red body. Fizzy one finger light tan head forms and disappears for some thick edging. Solid amount of lacing. S - Plums and raisins, brown sugar, alcohol heavy yeast, caramelized banana, molasses and copper pennies. Not very well integrated. T - Caramelized dark fruits lead into some bready malts. Brown sugar and spices with a mineral finish. Rich and earthy. M - Perfect level of silky carbonation, medium bodied. Clean finish with some lingering yeast esters and alcohol burn. O - Not a bad dubbel at all. A bit weak compared to the Belgians, but it does manage to capture some nice flavors and aromas. Awfully hot for a 7.6% beer.

750ml, caged and corked bottle. Racked on April ’12, NO 003. Cloudy brown with a smaller sized off white head. Aromas of yeast, dark fruits, some earthiness, lighter nuts, and lighter maple syrup. Tastes of dark fruits, maple syrup, caramel, and some candi sugar.

From the September 2012 3R6P gathering. +++ Sampled from a 750 ml brown bottle this beer poured a nut brown color with a medium sized foamy orange-tan head that faded and left a bit of lacing. The aroma was sweet cherry, berry, sugar and a touch of vinegar. The flavor was tart and dryish with a hint of caramel, nutty malts, faint cherry and anise. Long dry, malty anise and cherry finish. Medium body. Ok.
