12 ounce bottle. Cloudy mahogany brown color. Rich, sweet toasted malt aroma hints at black cherries and alcohol. More sweet toasted malt flavor with complex dried fruit and boozy notes. Slightly cloying with a sweet sherry like character and a touch of honey. Warming alcohol presence with every sip. Cloyingly sweet malt finish with some spicy hops.

Pas mal, mais en même temps, cela reste beaucoup trop sucré !

Dark brown reddish with small head. Not too overly sweet like a barley wine can be. Candy sugar and caramel, medium carbonation.

Nothing beats a good barley wine to close the weekend on a winter night. This one I taste as a vintage beer (best before date has expired by a year) but it being a barley wine, I am completely confident it has aged well. It has a creamy, moussy, densely packed, nicely lacing, yellowish white head and a clear (though misty with deposit), beautiful dark coppery bronze colour with strong fizz. Very powerful, perfumed and absolutely divine aroma, complex, a bit oxidized (which in this style only adds complexity, at least to my personal taste) and shouting "barley wine" all the way through: chocolate liqueur, candied cherries, port wine, gingerbread, fine champagne cognac, apricot jam, vanilla, cocoa powder, banana liqueur, candied orange, roasted chestnuts, caramel candy, cinnamon, honey. Another one I can keep sniffing for hours on end. Taste begins with rounded, candied fruits, sugary but in a noble, refined way, raisins and dates, very slight citrusy acidity just to give a touch of freshness and achieving this very well; full, smooth and vinous mouthfeel, somewhat oily, very rich, deep malt sweetness, caramel, nuts, biscuit and a hint of chocolate, carbonation tingling on the tongue (perhaps more so than usual in the style - the fizz was already an indication). In the finish, a long and drying, citrusy and peppery hop bitterishness comes forward but does not overpower the deliciously rich maltiness or the sugary fruitiness and gets accompanied by warming, bourbon- and brandy-like alcohol which remains, in all, relatively calm and gentle. Delicious sipper, with a lovely, enticing aroma; surely this was hoppier when fresh, but in this aged condition, it bears all the characteristics I expect from a big, mature barley wine. Flying Dog has not disappointed me so far.
