While that damn Dionysus was taking all the glory, Simcoe, Greek God of Beer and Relaxation, was out, diligently developing tools for man to brew- fresh grain and hops, active yeast, and bountiful water. With its golden glow and sharp hop bite, our Imperial Single Hop IPA is a tribute to this lesser-known God (and as temple-worthy as its namesake).

Aroma of citrus anf grapefruit. Flavour of grapefruit and light caramel. Crisp, clean and dry. Warming alcohol in the finish. To high abv is my opinion....

Backlog from lost & found notes: Aroma of peaches, pine and citrus. Taste is bread, pine and bitterness. Slightly boozy but drinkable.

Transfer from BA review on 11-4-13- Poured from bottle into a snifter Appearance – The beer pours a crystal clear orange amber color with little bubbles seen streaming up through the brew. Upon pouring, there is a one finger white head that has a great level of retention, very slowly fading to leave a decent level of foamy lace on the sides of the glass. Smell – The aroma is biggest of a grapefruit and floral smell. It also has some nice notes of herbs and a bit of pine. A spiciness and some bready aromas are there as well giving a rather hopped and drier malt smell overall. Taste – The taste begins with a rather bready and malty taste with hints of caramel and tangerine sweetness. From the start there is a rather strong level of grapefruit as well as some herbal flavors. As the taste advances the caramel initially fades while the grapefruit and herb grow stronger. The sweet however makes a comeback more toward the end of the taste with more tangerine and a light resurgence of the caramel coming to the tongue. Along with these flavors though, comes some new hop flavors of a pine and floral nature with a good deal of a spicy flavor as well. The floral taste remains very light, but the spice and the pine get rather strong at the end. The flavors left at the end of the tongue are all joined by a slightly burning boozy taste to leave a somewhat hot and spicy bitter hopped flavor to linger on the tongue. Mouthfeel – The body of the beer is on the thicker and creamier side with a carbonation level that is on the lower side. The thicker and creamier body and lower carbonation level really accentuate the mix of hop flavors, and with the hot alcohol and spice create a very warming feel to the brew. Overall – A rather nice double with a nice spicy flavor but a bit too big of a boozy bite and a little imbalanced. Overall though it is well worth a try.

355ml bottle. Pours a medium gold, with a white head. Hoppy, resiny aroma, spruce, apricot, grapefruit, pine needles, passion fruit, bay leaves. Off-dry, medium to full bodied, high bitterness, balanced CO2. Hoppy, fruity taste, apricot, resin, spruce, orange peel, mango. Really nice. (2013-10-??)

Shared 12 oz. bottle with a little age on it, poured to snifters showing a fairly clarified amber hue, with a modest, bubbly layer of soft white head foam, ring, and spotty lacing. The aroma was a touch of grain, with alcohol and a combo of citrus & resin, that produced kind of a Barleywine-like nose, and some accompanying, syrupy sweetness. The taste added lingering, moderate bitterness, and malt sweetness. Alcohol presence seemed minimized as the hop expression, but still finished with a pleasant bitterness. Lost a good deal of it’s DIPA punch in the cellar.

355ml bottle. Amber body with a medium white head. Nice malt base with some caramel, but overall kind of boozy, which takes some attention from the hops.

Light amber color, clear, with small creamy head. The hop aroma is deep, assuming a phenolic and medicinal character. Full bodied; strong malt flavor, nutty and cereally, with toffee, some crystal, and some vegetables; strong bitterness, with a lot of final hop resins.
Powerful, drinkable, but messy and inelegant; there is something wrong here.

Deep orange color, steady white head, good lacing. Bready, citrus fruity aroma. Full-bodied. Citrus, bread, pine and lots of alcohol in the flavor. High ABV kicks Simcoe’s ass and the best of its citrusness is covered by booze. But not a bad beer as such, just too heavy.

[ As Flying Dog Imperial IPA - Simcoe Single Hop ].
Clear medium yellow orange color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, moderate to heavy hoppy, orange - citrus, old hops. Initial flavour is moderate to heavy sweet and bitter, finish flavour is moderate to heavy sweet and heavy bitter with a long duration, riped fruit, dried fruit, citrus, hoppy, caramel. Body is medium, texture is oily, carbonation is soft. [20140217]
