COMMERCIAL DESCRIPTION
It may seem like we say this every time we release a Wild Dog beer, but our newest brew really is Flying Dog’s most unique beer to date. Collaborator Doppelbock was created through Flying Dog’s Open Source Beer Project, which gave amateur brewers a chance to give our brewing team recommendations and feedback on the everything from the grain, hops and yeast to the brewing process itself. We combined your feedback and created a unique Doppelbock recipe to brew up and release.

Collaborator has a full body with a sweet malt profile and a slight roast character. The complete recipe and printable labels are available for download at www.OpenSourceBeerProject.com. We want to thank everyone who contributed to creating this beer, it truly was a collaboration.

Bottle from Belmont Party. Poured dark reddish brown color with a creamy light brown head that was mostly diminished with fair lacing. Moderate sweet malty and small alcohol aroma. Medium body with a sticky texture. Moderate sweet malty toasted flavor with an average smooth bitter finish of moderate duration. My expectations where not met with a sweet soft beer.

Bottle at RBNAG-2009. Red amber colour with an off-white head. Aroma is dry, sweet, cellar, malt, hop. flavour is dry, sweet, malt, rosted, hop, cellar,citrus, caramel. Full body. Nice beer.

Bottle… Clear, deep, dark orange lager with a small, fizzy, off-white head. Decent retention. Cocoa and caramel aroma with a tangy, fruity undertone. Full-bodied with a 2% milk mouthfeel and gentle carbonation. Medium, metallic bitterness; light caramel sweetness and ultra-mild, lactic acidity. Lengthy, medium-bitter, slightly metallic finish. A shout goes out to pepsican for shipping this brew to me!

Ratman197 (7610) - Arvada, Colorado, USA - JAN 28, 2008
750 ml green corked and caged bottle poured a clear reddish copper with a lasting amber head. Aromas of carmel, molasses, dark fruit and a hint of chocolate. Palate was medium bodied and smooth with light carbonation. Flavors of carmel, brown sugar, fig and a hint of chocolate with a smooth lingering carmel finish.

Poured at DLD. I was surprised that I disliked this one. Brown color with a tan head. Aroma has some raisins, caramel, booze, and some odd herbal notes. Flavor is a weird mix of booze, wood, caramel, hops and fruit. Doesn’t come together well.

Thanks Jason for sharing. I didn’t know at the time of the whiskey cask and it probably contributed to the unusual aroma. Spicey malty flavour. Its malty brown, and significantly hoppy. Light brown colour, with malty foam, soapy bubbles, lacing noticed. Finishes on the malty side.

My Bottom Line:
Candied fruitiness wades in subtle toasted maltiness before green, wooden hops surmount the quiet grain bill with an important wave of bitterness. This Doppelbock is not really to style and overly expensive, but it nonetheless remains a drinkable strong lager.

Further Personal Perceptions:
-A film of foam floats atop the clean pale amber.
-Fruitiness is redolent of dried cranberries or cherries.
-Some black bean character comes from the grain bill.
-Alcohol barely heats up the back end.
-The malts are really not well developed for the style.
-If you add the cost of the beer into the mix, this becomes an outrageous robbery of a beer. At this price, you expect a veritable masterpiece, and this is eons away from one.

DocLock (6789) - Lower Pottsgrove, Pennsylvania, USA - DEC 6, 2007
Clear medium copper pour with 1-finger khaki head. Aroma is caramel malt, toffee, some assy funk, nuts, and polyurethane. Tastes caramel malty, with mild notes of brown sugar, cabernet, nuts. Not terribly complex, with a medium to light palate heft. It also gets rather hot near the end, while retaining a cloying quality, which seems paradoxical, I know, but try it and you’ll understand. I really wanted to like this one, but something just seemed amiss all the way through, and it didn’t mesh together well. This beer is analogous to a decent looking woman with a decent rack, yet when you get her in the sack you realize she has a winterbush and ugly feet.

Thanks to Chuck for bringing the bottle! Poured clear reddish-caramel with a short, loose cap of tan headage. The aroma picked up toasty, deeper caramelization along with a bit of herbal and floral hoppage.. nice, warm, and malty! The flavor had warm, deep caramel blended well with chocolate and molasses.. herbal and caramel notes ride through the warm finish paired with some pine and herbal bitterness. Warm and malty throughout with nice bitter accents.. decent balance.

Bours mahogany with a thin but stubborn off white head. Smells of caramel, some dark fruit, pepper, spice. Tastes of sweet caramel, some tarte hints, fruity, a touch od earthiness. Decent.
