COMMERCIAL DESCRIPTION
As an Imperial IPA, The Matador is full of drama and colour playing to the expectant passions of true beer aficionados. Fresh aromas of sweet cedar wood smolder in the warmth of this beer’s 10% ABV while Amarillo hops give this Imperial IPA astounding citrus flavours pushing its bittering to a solid 88 IBUs. The Matador is an artisanal beer truly worthy of Imperial status. Olé!

On tap at Barhop - Pours golden with decent white head. Aroma is sweet not too much of the traditional IPA hops present. Taste starts out sweet like candy but then blends into a too-sweet honey-like taste that feels a bit medicinal and I didn’t think hid the 11%alc well.

Bottle, 75cl. An unclear, orange-colored beer with a dense, finger-thick off-white head. There’s lots of cedar in the aroma, with grapefruit, some black pepper hints, alcohol, resins and a malty touch. The flavor has a nice bitterness, with resins, pale malts in the back, grapefruit, freshly ground black pepper and a good dash of cedar. Alcohol too, giving a certain warmth. It’s full-bodied and pleasantly carbonated, finishing with a more evident bitterness and maltyness. I love IPA’s and a few other styles with cedar ageing, this one too. Pity it’s a retired one. 150228

Bottle at Carnival Tasting in Ulfborg 2015-02-28. Clear golden/copper beer with a small but lasting offwhite head. Hoppy aroma, caramel, cedar, citrus, biscuit notes, some mango. Hoppy citrus flavor, balanced cedar, hay, peppery, mango, peach notes. Alcohol is well hidden and the cedar still allows other flavors. Very nice.

Bottle to goblet Cedar, smoke, citrus, and some tropical fruit. Reddish amber in colour, it’s also clear with some effervescence and a thick, creamy off white head. There’s some lacing, but it’s quite spotty. The taste is woody, and hoppy, with some spruce and pine, citrus in the middle and early to late, long lasting bitterness. This is quite interesting and enjoyable.

Rating #1091 - May 20, 2014 - Bottle from Coop (older bottle, not sure when this guy was released but I’m guessing mid 2013). Pours a darker amber, with a bubbly tan head. Aroma is cedar, earthy hops, mild citrus. Taste has held some of the hoppy profile, despite aging, lots of piney, resinous notes, again subtle citrus sweetness. Ole.

Pours a hazy amber-copper with a good sized white head with lots of lace. Aroma is cedar, citrus, caramel, and brown sugar. Flavour is citrus, alcohol, medium bitterness, cedar and a moderate sweetness.

2013-01-30 - on draught at Bar Hop. Cloudy/murky amber-gold with a smallish frothy beige head. Aroma - not much, really ... cedar and ... malt? alcohol? Taste - cedar and booze; wow! - reminded me of cheap sake - crazy stuff, it’s probably sweet, but all I got was sharp cedar and strong alcohol. What can be said - this is CRAZY - not horrible, but I came down with a cold the next day (had been fighting one for days) so maybe somehow the medicinal character appealed to me. Almost certainly would never drink it again.

Bottle thanks to Kevin. Pours orange with off white head. Nose/taste of orange peel, grapefruit peel, cedar, caramel malt and earthy grass. Finishes with strong cedar notes. Medium body.

Ambrée, limpide, pas beaucoup de mousse. Ronde et pleine. Amertume de poivre verts, cendrée, boite à cigare, caramel malté, légèrement vanillée. Arôme multiples et complexes. Amertume qui persiste agréablement en post-goût, qui continu d’évoluer jusqu’à l’atténuation très progressive. Épicée/houblonnée.

750ml bottle. Hazy orange colour, large foamy, yet oddly oily, head. Floral and citrus hops aromas, but not grapefruit. Some almond and spice, too. Sweet caramel malt, complex hops up front, but an earthiness lingers. Overall, really good, but that aftertaste was a detractor.

This beer does two things very well. The first would be it’s gimmic which is the cider wood chips. Gives this ipa a new dimension and a real cigar box feel. Although this flavor is quite dominant in this ipa the taste the cedar chips invoke really complement the hops in this Beer. The malt is still present but it’s sweetness is more subdued in contrast to other dominant flavours. Although the malt might not be upfront it manages to bring that heavier body you get in an IIPA. If you are going to go this heavy handed with cedar chips this was the right style to try it out in. Really enjoyable.
