One third of the wort used to make this splendid stout came from each of three North Carolina Breweries: Olde Hickory Brewery, The Duck-Rabbit Craft Brewery, and Foothills Brewing.

These were combined and aged in very rare 23 year old bourbon barrels. Olde Rabbit’s Foot Imperial Stout is rich and complex; as satisfying to drink as it was to make. We three craft brewers hope you will enjoy the very special Stout as much as we have.

Brewed with honey and with cocoa nibs added and aged in 23 year old Pappy Van Winkle barrels.

22oz bomber (2011) shared by dmac! Thanks bro! Pours a thick oily looking black color with a small foamy dark mocha head. Aroma of roasted stale coffee beans, sweet caramel, strong boozy bourbon, chocolate, oak, and butter. Taste of roasted coffee, rich caramel, toffee, dark chocolate, oak, and bourbon. Slightly oxidized, but still really solid.

Pours a very dark brown almost black color with tan head. Cocoa, whiskey, and some roasted malt on the nose; follows onto the palate. More whiskey notes on the finish.

At my place with Taylor, Matt, and Jake. Pours black with a circle of grey lacing. Aroma is phenomenal complex bourbon, great booze notes, fuck yeah, smooth malty very soft savory notes. Taste is tasty bourbon booze, dark roasted malt. The booze is a little over powering, but is very very nice beer.

Had to try this on my Birthday, at 11am! A: Plenty of pfft on the cap removal. Pours a black, intense ale. Thick in appearance, little to no head formation. Little lacing. Good looker. S: Wow, beautiful! Bourbon, vanilla, caramel, honey, darkened malts, praline, molasses, marzipan. Absolutely outstanding. T: A hint warm initially, but then the plums, dark fruits, bourbon barrels. The cocoa starts to come out here and remains now with excellent resonance. The beer is so complex. Now I have to get more. Shit. M: Thick, chewy, velvety with high viscous body and low to medium carbonation. Slicks my mouth and adheres to my palate. Exceptional. D: This beer blows me away. I haven’t had any of the beer from the breweries involved, but if this is their only release, then so be it! Make more! Serving type: bottle 03-07-2011

Bottle pours tick black with thin tan head, Wonderful bourbon aroma with underlying malts. Taste bourbon, chocolate, malts and oak. Thick rich palate with alcohol burn. Finish prolonged oak, roast and booze.

Top notch bourbon barrel aged stout, the only drawback was a little loo much oak for my taste.

Sample from a bottle. 2012 vintage. Completely opaque pitch black color. Little light brown head. Couple bits of lace. Vanilla, brownie aroma, very nice. Really good big chewy bigger body. Light carbonation, lightly dry finish. Bigger bitter taste, light alcohol warming. Very tasty. Little sweet, light barrel-y spice character. Big dark chocolate, light coffee roast. Awesome, delicious big beer. Super.

2009 bottle thanks to kp: pours an oily opaque with a thin beige head. Has a sweet dark caramel and chocolate malty nose with some vanilla bourbon oak and a hint of tart fruits. Starts with pretty good fullness with sweet dark malts and nice bourbon complexity before a drier dark chocolatey finish with a hint of tartness. Pretty well balanced and seems to have aged alright.
