Pour from the tap with an expected darkness topped by a creamy, sticky brown head. The aroma is a very understated dry roastiness that is pleasant but not remarkable. The flavor is much more amplified, with a strong, earthy combination of hops and a coffee-like bitterness from the roasted grains, and only a little sweetness to balance. The fine, prickly carbonation is neither enticing nor unpleasant. Overall, this is certainly a nice, robustly-flavored stout that I would gladly have in my glass many more times.

Draft at Barley’s. Another fantastic stout while in NC/TN on vacation! A black pour with a thin off white head. Scent is chocolate, fruit and musty. Taste is dark chocolate with woody notes. Creamy.

On draught at Barleys, Asheville on 7 July 2006. Extremely dark - almost black and entirely opaque. Generous and lasting tan head. Strong roasty aroma with coffee and chocolate. Dry and quite bitter on the palate with lots of cooking chocolate, but retains a smooth and rather creamy mouthfeel. Tends towards an imperial in ABV but certainly not too boozy. Supremely drinkable for the strength. Excellent stuff.

Deep brown/black in the glass with a very thin head. Aromas of roasted malt with hints of chocolate and coffee. Rich mouthfeel, well-integrated. Everything came together nicely here, and this was probably the best of the four beers I had from Foothills on my trip.

On tap at the brewpub. Pours black with a thick tan head. Aroma of chocolate and roasted malt. Flavor is very chocolatey with a nice roasted and sweet malt backbone. The palate is extremely smooth and easy drinking. This was the best Foothills beer on tap at the brewpub when I visited. Awesome stuff!

A deep dark stout with a very thin off white head. A superb aroma of chocolate covered cherries and alcohol, muskey and complex. In mouth, a beautiful complex stout with nice restrained bitter chocolate, nice Brett notes, oak barrel, smooth and enticing. On tap at Great North Carolina Brewers Fest., August 28 2010.
