COMMERCIAL DESCRIPTION
This saison is brewed with a significant amount of local alfalfa honey, producing delicate floral notes, a soft honey sweetness and a dry finish. A short time aging in oak wine barrels adds layers of complexity. 100% brettanomyces fermentation.

Editor’s Note: Bottled versions of this beer as well as draft version at GABF were barrel aged. Recent 2014 kegs at the brewery are not barrel aged.

Pour is a lighter gold color, slight haze, aggressive pour produces very little head that dissipates immediately. Nose has honey, lemon, apple skin, a touch of leathery brett, Flavor is considerably tart and sour, mostly fruity and juicy apple skins, lemon, light citric acid. Not much of the barrel, maybe a touch of tannin with a subtle brett leather. Flavors are very bright but lacks a bit of balance. Carb is high, a touch fuller than some of their other saisons, Not their best work; but bright and juicy.

Pours a heavily hazy yellow with a medium white cap that leaves some lacing. Nose is of cereals, fruits, carbonation acid traces and lightly funky. Taste is of fruits, wine and wood. Body was medium and carbonation medium-high and a little pricky. Another nice barrel aged saison by F&M!

Bottle (750 ml). Split 6-ways with the Québec crew. Thanks to John for this one! Gusher.

Appearance: Hazy/cloudy yellow with a small white head and little lacing.

Aroma: Nice funk with winey notes, brettanomyces, lemony, oak and apricots/peaches notes.

Taste: Peaches/apricots with brettanomyces, a nice funk, wine and light lemony notes.

Palate: Medium body. Moderate carbonation. Winey mouthfeel. Dry finish.

Overall: Another delicate, complex and super tasty barrel-aged Saison from Forest & Main. Quenching. Quite gueuze-ish. With just a little more carbonation, I think it would have been nearly perfect.

shimmering gold with lasting puffy white head. Incredibly dusty nose, tons of pear and apple with considerable brett a la cantillon, more juicy than boulevard saison brett. Front palate shows more sugar, light white grape a la peconic but way more pear and lemon citrus balance, mid palate showing dusty dough and lemon-lime citrus before the drying finish is minerals and faintly brett. High carbonation keeps it light, almost draws sweetness out too singularly.
