This saison is brewed with a significant amount of local alfalfa honey, producing delicate floral notes, a soft honey sweetness and a dry finish. A short time aging in oak wine barrels adds layers of complexity. 100% brettanomyces fermentation.

Editor’s Note: Bottled versions of this beer as well as draft version at GABF were barrel aged. Recent 2014 kegs at the brewery are not barrel aged.

wow, big thanks to Matt on this one, a very light and tasty saison, everything is light nuances complex and perfectly balanced. Great tasty grains, wheat and light barley flavors.

Thanks to Paul for sharing. Light golden body, moderate haze, small cap. Aromas of brett, apple, lemon, a touch of oak. Light acetic character with hints of wine. Medium tartness with some tasty fruit notes. Light to medium in body with a slight pucker in the finish. Nothing over the top or super impressive here, but a solid and tasty beverage nonetheless.

UPDATED: JUL 15, 2015 500ml bottle, November 2014 batch. Hazed gold with a short and quick white head. Aroma impression is lemon juice, oak, fennel, phosphorus / matchstick phenols, pickle juice / brine, alcohol fumes, possibly fusels. Malt is starchy, lightly kilned / toasted. I get some kind of butyric / vomit note as well :( The pickle notes in the aroma come and go, showing the more enjoyable lemon-brett note beneath, but the alcohol fumes don’t seem to dissipate. Medium-light body, lightly sweet, has some nice juiciness across the middle, but the carbonation is low and dull and the acidity strong. Kind of wacky nose, all sorts of stuff going on but I only find the lemon juice note enjoyable, while the alcohol / chemical notes distracting.

Bottle. Pours crystal clear golden, small white head, dissipates quickly with a bit of lacing. Aroma is bretty, oak, lemon, a touch of white wine. Flavor is light plus tart, brett forward, medium funk, oak tannins. Medium body, low carbonation. Solid.

500 mL bottle into tulip glass. Hazy straw golden pour with light head. Aroma is really nice stone fruits, oak, apple, and flowers. Taste is mild tart, light cheese, spicy oak, and vinous notes. lighter carb but soft and it works. Another winner from F&M.

500ml bottle in a tulip. Pours hazy golden with a white head. Aroma of light tartness/sourness, some light oak and wine, hints of light fruits, some light malts, and the faintest note of off flavors. Flavor the same with a nice blend. Average texture. A really cool beer.

Bottle..Pour is gold with a bubbly head that fades..Nose is funk, oak, dry, grape, some cheese...Taste is soft, spice, oak, dry,lemon, soft funk..

Pour is a lighter gold color, slight haze, aggressive pour produces very little head that dissipates immediately. Nose has honey, lemon, apple skin, a touch of leathery brett, Flavor is considerably tart and sour, mostly fruity and juicy apple skins, lemon, light citric acid. Not much of the barrel, maybe a touch of tannin with a subtle brett leather. Flavors are very bright but lacks a bit of balance. Carb is high, a touch fuller than some of their other saisons, Not their best work; but bright and juicy.

Bottle. Light golden pour with no head. Light wine, fruit and tart aromas. Wish it was more carbonated. Tart wine, fruit and saison yeast tones.
