What could make our Cavatica Stout even better? Bourbon! We let our house stout sit in Four Roses Bourbon Barrels for several months. There in the dark, bourbon-enriched barrels, the beer soaked up as much bourbon quality as it could before we sent it off to the bright tank. With an up-front bourbon taste backed by our dark, malty stout, the Bourbon Barrel Cavatica is a deliciously potent brew that demands a taste.

On draught at Roscoe’s, aged in Maker’s barrels. Love this stout even more with the added kick of barrel aging.

Red wax-dipped bomber. Aroma is strong in bourbon; also, dark fruit, raisins, wood, brown sugar, vanilla. Pours opaque black with a thick tan head with great retention; laces a little. Taste is woody, a little tart, alcoholic, licorice, dark fruit. Body is a little thinner than expected. A little too woody and boozy for my tastes. Still, not bad.

9.9% ABV this year. Poured from a bomber into a chalice on 04.24.15. A: Cocoa, chalk, dark berry, and slight bourbon. A: 2 finger tan head that stays. Midnight black body with no red in the glass. T: Cocoa, milk, and milk chocolate dominate. Very light vanilla on the back end, dark berry, a slight barrel woodiness, and raisin are subtle. P: Creamy smooth. Thin mouthfeel, but fluffy. O: This is a very subtle BBA stout with soft notes. They drift up instead of being in your face. The beer grew on me as the bourbon flavor became stronger. I probably wouldn’t buy it again at the price ($15), though.

Bottle from Mongers. Pours a ruddy black color with a small beige head. A big sweet nose, vanilla and oak. Huge sweet bourbon, vanilla, toffee, burnt toffee, dark fruit, berries, chocolate. Hot bourbon. Light astringent oak and heavy whiskey. Damn good. This is aged in Willett barrels according to the bottle. Awesome beer.

Came to me straight from the Taproom in Astoria. Deep dark body with a nice two finger tan head, notes of light wood, and coffee come to the nose. The body is perfect, not too heavy not too thin. Taste is of sweet vanilla and toffee notes. The light bourbon barrel taste lingers in the end drawing you back for more. The notes from the bottle were more appealing to me than the tap.

An awesome bourbon barrel stout. Pours a deep black with a tan head. Smells of coffee, cinnamon and some licorice. Taste is creamy, with some vanilla and cocoa. The bourbon comes in at the finish. The stout and bourbon are a bit separate, not integrated like some other examples. Paired with a lamb burger, the beer is smoothed out, with a bit more bourbon coming out.

Bottle - Dark roast, sweet bourbon, wood notes and some boozy burnt notes. Deep jet brown with a nice brown head. Woody dark roast, bourbon notes, dark chocolate and a long finish with a touch of coconut. Some fruity notes pop up as well.

[3/1/15] Draught at The Beer Junction in Seattle. Black with a tan head. Aroma of chocolate, bourbon, vanilla and alcohol. Sweet flavor with chocolate, bourbon, vanilla, some fruitiness and some booziness. Rounded mouthfeel. Too boozy.

This beer pours rich black with creamy head which hangs around. It has a pleasing vanilla aroma and flavor. The bourbon punctuates this beers flavor and subtle toffee and coffee flavors come though towards the end. Very well done. I like it a lot.

This is the 2014, 9.9% ABV, Willet bourbon barrel edition: smooth, rich vanilla nose with some background heat. Beautiful, classic Cavatica body and flavor. Good bitterness, Fort George thickness to the body and robust malts. The bourbon flavors fucking delicious. A little spice, vanilla, dry oak and cedar herbal qualities.
