What could make our Cavatica Stout even better? Bourbon! We let our house stout sit in Four Roses Bourbon Barrels for several months. There in the dark, bourbon-enriched barrels, the beer soaked up as much bourbon quality as it could before we sent it off to the bright tank. With an up-front bourbon taste backed by our dark, malty stout, the Bourbon Barrel Cavatica is a deliciously potent brew that demands a taste.

On draught at Roscoe’s, aged in Maker’s barrels. Love this stout even more with the added kick of barrel aging.

Bottle. 6.99 at CostCo. Deal! A: Pitch black with a foamy firm cappuccino head. Lacing. N: Raisin, oak, bourbon, caramel, licorice, cocoa underneath, coffee, anise, prune, and some dark cherry. More wood. Smoke and roast. T: Quite sweet, good bitterness, some bourbon sourness. M: Medium heavy body, soft carbonation, no alcohol. O: Solid IRS, but nothing much for me to write home about. There’s a strange disconnect between its complexity and how much I do(n’t) enjoy drinking it.

Bottle @ Steasy’s. Thanks for sharing! Brown pour with a small head. Buggy wood. Tart dark fruits. Tasted grain. Earthy. Well-rounded nose. Flavor falls a bit flat. Some chocolate. Hot, rich graininess. Light pepper. Slightly thin. Decent.

22oz bottle pours out dark brown almost black topped with a tan head. nose is heavy bourbon a light barrel kick the vanilla chocolate and roast. Taste is more of the heavy bourbon a nice barrel sweetness chocolate vanilla. But pretty thin for a big bourbon imp stout.

Bottle: Deep brown pour with a thin beige cap. The aroma is intoxicating; chocolate, bourbon, ash. Really nice. Heavy impact from the barrel treatment, bourbon and wood. A little bittersweet chocolate and more ash.

Bottle: Poured a pitch-black color stout with a large dark brown foamy head with good retention and some lacing. Aroma of vanilla and bourbon with nice black chocolate and light roasted malt. Taste is also a really nice mix of vanilla and bourbon with some real exquisite black chocolate and some light roasted malt with some residual sugar notes. Body is full with nice creamy texture and good carbonation with no apparent alcohol.

Bottle shared by Jack, thanks! Pours near black with a brown head that dissipates to the edges. Aroma has sweet dark grains with some molasses, light roasted malts and some bourbon underlying. Flavor has sweet dark grains and molasses upfront with some roasted malts and a bit of bourbon backing.

22 oz. bottle, thanks to our innkeeper in Astoria for gifting this to us on our way out! Deep, dark brown pour with a somewhat dense, pretty beige head. Nose and flavor are lovely, with balanced vanilla and hints of hazelnut playing with a good, smooth roasted flavor, light to medium bitterness, milk chocolate, ganache. Slightly light bodied for nearly 10%, but in a welcome way; not overly rich, and certainly not cloying. Beautiful barrel character; always nice to see a brewery that knows what they’re doing put something in a barrel. Damn good stuff.

Dark brown pour with a slight tan head. Boozy malty nose. Taste is nice, very malty. Prett good. Sweet bitter finish.

dark pour big dark tan head. Aroma leather, oak, whiskey, earthy. Tastes whiskey, buttery. Butter is out of control here. A little husky horse -goat here too. Sweet and boozy. hard carb. alcohol not concealed.
