COMMERCIAL DESCRIPTION
Barrel aged cross between an Old Ale and a Baltic Porter. Brewed with a lot of biscuit malt and molasses.

Draft at Teresa’s. Pours deep, rich brown, almost Coca-Cola black, with an amberish, creamy head. Aroma of vanilla, cinnamon, roasted malts, caramel, oats, barley, and sweet hints of coffee. Body is not quite full; bold but not overwhelming, with a silky, milky smoothness and a slick, satisfying mouthfeel. Not boozy in the least, but finishes with a pleasant, slight warming. Excellent brew.

Draught at Teresa’s. Lustruous black body with a thin tan head. Redolent of dark chocolate, molasses, strong oakiness, caramel, vanilla, rum, and a hint of maple syrup. Flavor is smooth chocolate syrup and licorice, caramel and vanilla, slightly malty, somewhat fruity in the middle, with a bitter oak finish rounded out by a maple syrup sweetness. Palate was full and velvety, very sweet yet balanced. A fantastic beer.

UPDATED: AUG 17, 2011 Draft. Dark brown with the aroma of malt, raisins, dark fruit, and chocolate. The taste was basically like the aroma but really sweet with astringency in the middle notes. The finish was of roasted malt and chocolate. Alittle too sweet for me, but good never the less.

Muddy brown color with a light head. Aroma of hot chocolate, marshmellows and assorted chocolates and choco-kids cereals, and cream. Flavor has some light vanilla, bourbon, marshmallows cocoa, chocolates and light latte. Nice feel - very unique, well put together and tasty as hell. Awesome.

Sampled at FoBAB 09. Dark brown pour with tan head. Aroma of biscuity grains and fruit, molasses, and wood. Flavor is woody, some bourbon, dark fruits, dark sugary syrup, with very biscuity malt. I remember reading the description and thinking, "wow, this is really biscuity, what the hell." It helps take away with some of the sweetness. Oily texture, with soft carbonation. Awesome.

On tap at CAH. Poured a deep brown color with a smaller sized off white head. Aromas of chocolate, molasses, dark fruitiness, maple syrup, and wood. Tastes of chocolate, vanilla, maple syrup, marshmallows, molasses, dark fruits, and wood. Alcohol content well hidden. Nice...

Tap at CAH. Pours a deeper brown with amber notes and a smaller creamy off white head. Aroma of chocolate, maple, tobacco, dark fruits and oak. Flavor of milk chocolate, molasses, maple, raisins and oak.

On tap. Poured black with a thin brown head. Aroma was full of sweet biscuit like grains, some caramel and a hint of alcohol (bourbon). Flavor was the same sweet grains that definitely gave a fresh biscuit flavor with an undertone of alcohol and caramel. Very smooth throughout.

Silphium (3167) - East Lansing, Michigan, USA - DEC 29, 2009
On tap at Founders, served in a snifter. Deep, murky brown to black body, medium dissipating light tan head. Vinous nose with oak, sweet, rich molasses, and toasty malts. Rich, chewy body, dominated by big, marshmallowy molasses notes and sweet breads or candy, with just the right amount of oak and bourbon to enhance the alcohol heat. Complex, rich, and dangerously drinkable. The use of molasses gives this beer an interesting imperial stout-like quality, but the subtle hopping and lack of roasted flavors is firmly in the old ale camp. Delicious.
