Our Hop Knot IPA is made only from American malt and lots of American hops, which produce a big, broad-shouldered, hoppy beer backed up by a character as warm as, well, Mom and apple pieÖ Hop Knot IPA get its peculiar name from the weaving of four different hops added at four separate times during the brewing process. Including our cavernous hop-back, which gets so stuffed with whole leaf hops that we feel genuine guilt for its excess. Hop Knot is an ale that is to be enjoyed with friends, spicy food or any time you need a good hop fix without the harsh bitterness. We hope you enjoy this pioneering beer made in the bold spirit of Americans everywhere.

UPDATED: MAR 1, 2011 On tap at Four Peaks and at the Sheraton Phoenix Airport. Crystal clear light copper color witha quickly disappearing white head. Strong fresh hop aroma rising off this. Astringent, slighty resiny pine and grapefruit and light citrus flavors from the hops with a good balance from the caramel malt flavor, but itís really just there as a base for the hops. Definitely a hop lovers beer, the bitterness bites in and sticks around long after youíve swallowed it. From reading a few of the other reviews, I have a feeling this beer is best fresh from the tap rather than from a bottle thatís had to travel. All these delicious hop flavors probably donít fare as well when they arenít as fresh which is a shame for those who arenít in Phoenix to get it that way. Tasty, well-made IPA.

UPDATED: MAY 24, 2013 Have had this on tap, this rate is from the can. Pale to look at. Big bold pine and grapefruit aromas. Fruity hop flavors are right up front, followed by bitterness mixed with a little semi sweet malt. Dry and mildy bitter finish. The beer leans more toward the hop. Slightly on the thin side.

On tap at brewpub. A smooth drinking India Pale Ale. Nice balance. Some citrus and pine flavors with malty caramel in the background. Sharp finish but lacking a bitter kick. Tasty but average.

Bright deep straw clear as a berk. Thick frothy white head. Huge lovely aroma of tropical fruit. Super aroma. Flavor doesnít quite live up but lightly hoppy. A nice beer.

Consumed in glass after being poured from can. Obtained from a friend who visited AZ. Pour is a very pleasant orange color with a noticeable haze. Minimal, quickly dissipating head with a desire to cling to the glass. Aroma is definitely hops with emphasis on resiny notes. Slight sweetness trying to come through as a result of malty backbone. Strong hop bitterness hits at the back end of the taste. Citrus peel. Maybe a slight tropical fruit element but overwhelming resembles standard West Coast IPAs. Itís actually a pretty tasty, refreshing beer. First one Iíve tried from this brewery (first one from AZ for that matter) and I would knot (clever right? ) hesitate to try again.

12 oz can into a tulip glass. No date indicated. Thanks to azdback for this! Pours a nice clear dark amber body. Neat fluffy white foam simmers down to a thick edging and a thin cap. Super sticky lacing. Aroma is grapefruit heavy with a bit of pine and dank resin. Taste is similar with bitter grapefruit and pine. Finishes floral with some caramel malt. One of the driest finishes Iíve ever had in an IPA. So dry it chaps the lips. Mouth feel is a bit watery but the bitterness helps carry the favors through to the very end. Overall this is a really solid IPA that I would never kick out of the fridge. I really love that dry finish, pretty unique for the style.

Can. Clear, golden orange color with some tiny bubbles appearing near the bottom of my glass. There was a small white head, but after a minute it is only some sparse bubbles. Loads of tropical fruit, with some orange and grapefruit appearing in the nose. Quite a nice aroma. Taste is a bit lighter with more caramel coming forward. Just doesnít taste as nice at it smells. Nice, lighter body. Pretty tasty IPA that could be drank almost any time.

From the can. Clear golden color with a big white head that fades down to a sliver. Nose is loaded with citrus fruits; grapefruit, pineapple. The flavor is tons more of the same, lots of juicy citrus fruit and only a touch of bitterness. Just what a sessionable West-coast IPA should be.
