Tap at brewery, poured by Swalden.
Pours a deep, rich mustard orange with an engaging aroma of dewy grass, freshly-fallen autumn leaves, and floral bread. Flavor is a floral/sweet hoppy bread with light toast around the edges. Tingly and lingering on the tongue. Fantastic kolsch!

Dixonian (1562) - Plano, Texas, USA - JUL 12, 2011
Out of their 200 year old barrel @ the Addison Flying Saucer. Clear yellow pour with a nice amount of white head. Aromas of grain, fresh cut grass, some citrus, and wood from the barrel. Flavor is woody as well with more citrus, spice, and grass. Not bad - I typically don’t care for beers in this style.

On tap at the Austin, TX Ginger Man. Hazy straw pour under a two finger shaving cream texture white head. Mild citrus aroma. Lightly malty flavor with lemon zest and some sour yeast character. Rich texture and a long modestly sweet finish. This one just didn’t work for me. Lacks the classic flavor and texture profiles of a Kölsch.

Clear gold with a nice white head. Smells light and grassy and a little sweet. Flavor is grains with a little citrus and just a hint of earthiness. Very light and refreshing.

My go to summer beer. Very dry finish with some floral hop notes, light blonde color and a little more effervescent than some of their other offerings. Superior drinkability.

I want to be a fan of this brewery, but sometimes it’s tough. Yellow with good head. Ok flavor, but but a bit watery.

[Tap] Pours a clear golden color with lots of white head. Highly carbonated. Grassy hops and light malts in the aroma. The taste is of cereal grains, light citrus, light fruits, light hops... Anyways it’s light in many flavor aspects, but that’s to be expected with the style. Good palate and very refreshing.

UPDATED: AUG 21, 2013 Pours clear gold from a 12 ounce bottle with a small white head that diminishes quickly. Nice clean taste on the palate. Aroma of lemon tea. Not much carbonation and not very crisp. Finishes weak. An excellent refreshing summer beer though.

UPDATED: APR 5, 2015 4/15 rerate........again didn’t take notes and didn’t change rating. it’s an ok dirnkable beer nothing really stands out.................draft at ranch in Las Colinas. Had a couple a couple days ago - I remember it was good but not many details; will try again..

Very cloudy golden color with a small white head. The nose is all buttery big time, and the scent finishes with a little hops. First, the character comes outr bright and lively, then gives way to a sweet, mossy malt. Good bite, a little sour, and full finish.
