American Wild Ale.
Rarely released in its purest form, Ananke is the backbone of our wild ale program, a base beer used for blending and fruit infusion. Named for the ancient Greek Goddess of inevitability and personification of destiny, necessity & fate, Ananke helps bring order to an otherwise chaotic universe. Such as her namesake, this delicately sour ale’s presence is felt throughout all of our barrel-aged beers. Ingredients: Pilsen & acidulated malts; raw wheat; flaked rye; Perle hops; top-fermenting yeast; wild yeast & bacteria; natural, limestone-filtered, Edwards Aquifer H2O; love

Tap at brewpub may 2012-pours hazy lite orange with no head. nose is wierd-lots of lemon, berries, and almost a woody coconut note-must be from the barrel aging. flavors are lite sour, lite tar yet shape in its delivery. hits the palate very nicely. pretty lemony and lite berry flavor. very nice cool looking brew as well. One of the best sours from the sampler. WIll revisit this rating from the bottle i have as well.

Freetail ananke. 22oz bottle. Courtesy of mar... Pours a wheaty lemony light brown hue and topped with a fluffy feathery white head... Aroma of lactic acid semi-bright vinegar. Lemon and white grapes, grapefruit citrus notes. Refreshing after the initial acidic bite... Flavors are a continuation of the same with a grapefruit white wine influence. Just shy of medium bodied. Nice after the initial bite. Reminds me of Cuvee de Castleton actually. Really drinkable 8/4/8/4/15

22 oz. bottle shared by Jeff- thanks again, Jeff! 2012 vintage. Pours a pale, hazy yellow-gold with no head. Aroma of white grapes, lemon, herbs, funk, oak, lactic tartness, and yogurt. The flavor is pretty much the same but even cleaner and nicer. Light-bodied, with a tart mouthfeel and moderate carbonation. Clean, crisp, and refreshing. And sessionable!

Bottle 75 cl, tnx to Kan. Pours hazy golden yellow with a small white rim of head. Aroma is sour acidy fruity honey stable. Flavor is a darn sour blowin your face in the beginning, getting more fruity slightly bitter sustaining the sour turnig more sweet with saliva and gerting more fry sour character towards the end. Finishes with sour dryish and fruity aftetaste.

Bottle shared by someone at the Hill Farmstead second anniversary party. Pours a hazed gold with a thin white head. Light herbal notes, musk and toast, soft acid. Medium bodied, musk, sweetness, acid. Gentle lactic qualities. Long musk, touch of acid. Musk on the finish, long and funky.

bottle share at hill farmstead, this one is amazing. I love the wine grapy charactersitics a wine barrel aging gives sour beers. Great beer for my first Texan Beer!

2012 version in bomber. Pours hazy yellow with a small white head. Nose is lemons, bret yeasts (?). Taste is bret yeast, acidic and moderate citrus. Tangy and tart but not supremely dry. Slight alcohol flavors. Leaves lots of flavor behind. I like this one.
