From notes. First reviewed 12/14/2011. Poured from a 12 oz. bottle into a tulip. Thanks to bauermj for bringing this over.
The beer itself is a pale champagne yellow with a scarce white head that fades pretty much right away.
The aroma is strong at first but fades a little bit. Slight tartness, citrus rind, a little bit of funk, and some white grape. A bit of funk in the back.
Ananke is mostly sour, not much funk in the flavor. Tart green apple, some white grape and some lemon zest comes on stronger as the sip progresses. Overall a fairly mellow flavor.
The carbonation is a bit light, as is the body. The tartness is on the light side, leading to only a light salivation with each sip.
My sense is that Freetail stayed a bit conservative with their first sour. It was good, but more delicate than the aggressive sour style I like.

Pours cloudy lemon golden with a small white head. The aroma is wild yeast aroma. The flavor is light lemony tart that is pretty smooth on the palate on a good body. The palate ends smoothly with no tart or sour bite.

Absolutely flat, Aroma is a dry sour, flavor is a pour of white wine sour brulee, apricot, lemon.

Tasted on 12/17/11 from a 12oz bottle, 2010 vintage, thanks to atxdelivery. Pours a hazy light orange with not head, but just some thin bubbly lace. The nose is burnt rubber sour with some lemon peel, smoke, and spiced aroma. The flavor is light all around, with sour lemon, a hint of smoke, burnt rubber, white wine vinegar, and just a hint of light bread malt. The body is light with light, but still stinging carbonation, with a long white wine vinegar and lemon peel sour finish.

355mL thanks to drowland. Pours a hazy light yellow with white bubbles- no head formation. Nose is doughy, mild urea sting, lemon, sour apricot, small pickle/acetic acid. Apricot plus pickle.... Taste is tart moving to bland but mouthwatering acetic. Small malty graininess, big dough character. Finishes buttery. Very weird. Nothing offensive...nothing cohesive.

11/11/11. 12oz bottle courtesy ericandersnavy. Somewhat faint aroma of wood and fruitiness, but also a touch of medicinal plastic. Slightly tart, sweet malty flavor with light fruits and a touch of alcohol. Not bad!

Bottled. A hazy yellow beer with a thin white head. The aroma has notes of wood, brettanomyces, and malt. The flavor is sweet and sour with notes of brettanomyces, wood, malt, and lemons. The body is light.

’10-thanks jtclockwork for sharing-12oz bottle- pours a white ring for a head and cloudy straw/yellow color. Aroma is yeast-bret, tart, light fruit-white grape. Taste is yeast-bret, acidic/tart-lemon, light malt, bread, wood, light fruit-white grape. Clean/easy.

12 oz bottle courtesy of atxdelivery. Thanks! My first step into the world of Freetail. Pours a hazy dulled pineapple hue, some darker gold glow and straw, well hazed, with a tiny brighter white ring of a head atop, stays that way with minimal lacing. Aromas are interesting and fairly potent, preaching a healthy white wine aroma up front, lots of fuzzy peach, Granny Smith Apples, grapefruit, and honeysuckle. Some honeydew melon, sour lemons as decent kick of lactic acid kicks into play, some yogurt, vanilla and oak, with light dusty brett and a huge smacking pineapple essence. Coriander, papaya and mango sprinkle in. This smells right up my alley, if not a bit light on sourness. Initial is a lighter bodied beer, a bit light on carbonation and body. Offering some bready malts that are soaked in white wine. Straw, white grapes, grapefruit and cool melon fruit. Wet oak, vanilla, a faint buttery oak essence. With some lemons, light lactic acid, some dry bretty dust on the back and further in some soft cheesey funk picks up. Still, a white wine essence and the fruity vibrance of a Pinot Grigio seem to take the center stage. A bit underbodied with peaches and pineapple, melon, and decent citrus complimenting just a light bubbling of carbonation and some decent lemony lactic acid, preaching a decent to smaller sourness. I’d like to see this develop more in the barrel. As it is, I really dig the aroma and the taste is nice but needs more body and depth of wild yeast. The appearance and carbonation are lacking. Overall, powerful aroma, quite drinkable, but needs more time/development to let the wild yeast take over (Perhaps it needed more fermentables for said yeast?). Nice, the faults don’t break it, but also don’t elevate it above the middle of the pack. The aroma is my favorite in recent memory of many a beer. Witbier base?

Bottle thanks to ericandersnavy. Pours a murky bright yellow with white fizzy white head. Aroma tart, Brett, citrus, tart wheat. Flavor is much the same....tasty!!!!!
