(12oz bottle, 2010 vintage, courtesy of mar) Pours a clear yellow body with a spare white head. Aroma of lemon, yogurt, and some horseblanket. Flavor of lemon, orange, some lacto, brett, and dried apricot with a somewhat dry, oak finish.

Bottle shared by someone at the Hill Farmstead second anniversary party. Pours a hazed gold with a thin white head. Light herbal notes, musk and toast, soft acid. Medium bodied, musk, sweetness, acid. Gentle lactic qualities. Long musk, touch of acid. Musk on the finish, long and funky.

bottle share at hill farmstead, this one is amazing. I love the wine grapy charactersitics a wine barrel aging gives sour beers. Great beer for my first Texan Beer!

Tap flight at the brewery. Pretty standard golden sour. Light golden pour. Pineapple with a moderly tart funkiness. Dry finish. Not bad.

2012 version in bomber. Pours hazy yellow with a small white head. Nose is lemons, bret yeasts (?). Taste is bret yeast, acidic and moderate citrus. Tangy and tart but not supremely dry. Slight alcohol flavors. Leaves lots of flavor behind. I like this one.

This second release of only about 700 bottles in 22oz this year is a pleasant surprise. It pours a hazy sunshine color and has a sour nose. This is their base beer for the other sours they do. This is more reminisent of a gueze than any flavored sour beers. To me it reminds me of lemonade a bit. Very sessionable sour and especially for the hot summer days coming up in austin

From notes. First reviewed 12/14/2011. Poured from a 12 oz. bottle into a tulip. Thanks to bauermj for bringing this over. The beer itself is a pale champagne yellow with a scarce white head that fades pretty much right away. The aroma is strong at first but fades a little bit. Slight tartness, citrus rind, a little bit of funk, and some white grape. A bit of funk in the back. Ananke is mostly sour, not much funk in the flavor. Tart green apple, some white grape and some lemon zest comes on stronger as the sip progresses. Overall a fairly mellow flavor. The carbonation is a bit light, as is the body. The tartness is on the light side, leading to only a light salivation with each sip. My sense is that Freetail stayed a bit conservative with their first sour. It was good, but more delicate than the aggressive sour style I like.

Pours cloudy lemon golden with a small white head. The aroma is wild yeast aroma. The flavor is light lemony tart that is pretty smooth on the palate on a good body. The palate ends smoothly with no tart or sour bite.

Absolutely flat, Aroma is a dry sour, flavor is a pour of white wine sour brulee, apricot, lemon.
