Clear amber gold color, frothy rice-colored head. Lemon zest, grape, stained oak, leather, and funk. Woody, tannic, almost no tartness, and some bitterness - very much unexpected. Soft carb, but the body is oddly heavy. Finish is long and bitter.

Pours a deep gold with some head. Nose is very funky with lots of oak, vanilla, and lemon. Taste is grassy, lemon, granny smith apple, and grape. Itís both very sour and very dry. Light bodied with a lot of carbonation. Very nice.

750ml bottle. Pours out a golden topped with a white head. Nose is big barrel vanilla sour tart wine barrel and a nice brett..taste is more of the nice wine barrel tart pucker grape and a nice end.

Draft pour at brewery, tangerine color pour thin head. Brett citrus aroma, flavor is balanced with hops and citrus brett and wine oak tasts. Great beer.

On tap @ Fremont for The Lamb 2016bottle release. Iím assuming this is a slightly different beer from the previously released versions, though Iím not sure of the details. 750ml bottles as well, so at least that has changed. Pours hazy golden orange with thin white head. Aroma is rich, earthy, funky notes; big oaky and vinous undertones standout as well. Taste is rich, oaky toasted malt, lightly dry and tart from the Brett, but not dominantly so. Really rich for a saison. Very tasty, and I expect this will improve with age.

Nice lemony lemon appearance. Farmhouse funk and lemon peal. Nice and balanced.

Bottle at Wtf 2. Pours a cloudy orange with medium frothy off white head. The aroma is yeast, spice, funk. Medium mouth with strong brett, grape, white wine, funky, light finish, very good.

375 ml bottle poured a clear orange amber with a small lasting white head. Aromas of caramel, white wine, barnyard funk and light citrus. Palate was light bodied and smooth with a dry finish. Flavors of straw,caramel, white wine and light barnyard funk woth a smooth dry lingering white wine finish.

Bottle @ What the Funk, October 2014, Denver. Pours a pretty clear orange appearance with a fluffy white head. Pretty high carbonation. Light white wine, blood oranges, funk, some tropical fruits, and white pepper in the flavor. Not super complex but pretty easy to drink. Not bad.

Letís see how weíre doing a year later.
Took a champagne corker to get the cork out this bitch. Pours golden with a three finger top that falls to a finger quilt of creamy whites. Smells funky with some hay, pineapple, sweet golden apple, soft chardonnary barrel and grape with a hint of grain. Itís bitter, grainy, touch of dust, some leather and soily nuts. Thin bodied with high carb and a salivating finish. Better beer than before.

From the label: "The Lamb is the first release of the Fremont Fermentation Lab, a project of Fremont Brewing created to brew unique small-batch artisan beers, aged in oak and touched by wildness. This saison is brewed with Northwest hops, aged 7 months in oak barrels with Brettanomyces Lambicus to produce pear and apple notes and a distinct but gentle, funky farmhouse character. The Lamb is bottle conditioned and finishes dry and crips. Because Beer Matters!"
Down & Dirty: 2-Row and Wheat malts with Magnum and Cascade hops.
I inquired about the barrels, and was told they are Merlot barrels.
Pours light golden with a solid sheet of fine white foam. Either Iím victim to the power of suggestion, or they hit is spot on with the description here: pears and apples, a hint of wet linen mildew, grass and lemon zest. Flavor initially is dry and woody, with clay like saison yeast flavors, grain, slight bitterness, hints of baking soda and medicinal sharpness. As it warms the merlot tones actually make an appearance, just as the body carries the fullness and silky character a fine merlot has as well. The carb is prickly and moderate with a slick finish. The flavor of the finish is relatively long and holsters some of the barnyard aspects I would like more of up front. Overall the beer is okay, Iíd like to hear what the Saison experts out there think of this one. I think the beer was worth the trip, and Iím interested to see how this matures.
