After settling in, the foam is very creamy. Coffee and caramel aroma, pleasant. Flavour is toasted caramel with a quite insistent bitterness which makes it an almost tart but very tasty experience. Very good beer.

Noire opaque ayant une énorme mousse qui menace de déborder à moitié servie. Une dentelle à grosses mailles décor les parois du verre. Odeurs de grains rôtis, de caramel et/ou de sucre cuit. Le goût est de mélasse, de tire-éponge, encore de caramel, le tout agrémenté de pointes acidulées, ou encore âcres par moment. Une amertume est présente en arrière-goût. Appearance : Pitch black with small espresso like head. Long retention.
Aroma : Roasted malt, coffee and piny hops.
Taste : Piny and citrusy hops with roasted malt. Some coffee too. Light acidity on the finish but nothing too disturbing. Piny and citrusy notes on the finish.
Overall : Nicely balanced. A bit more hops than the average IS. Quite tasty and not too heavy. This is fairly good example of the style, well made and quite tasty.

Comment: Bouteille de 750ml. bue lors de la dégustation Armand en compagnie de Julien, Patrick et Pierre-Luc.
Description: Bière noire comme il se doit avec une mousse durable brune. Le nez est dans le registre d’une Imperial Stout avec des notes de café et du chocolat. La bouche est soyeuse et ronde avec une belle texture huileuse. Le chocolat domine la palette de saveurs.

Une version à 8.9 %. Une belle robe noire et sa tête mousseuse bien installée. Un nez de grains rôtis et de grains torréfiés encore fumants qui développent des parfums de café et des parfums de mélasse. Une sensation verte qui s’installe à travers tout ce malt. Au goût, des flaveurs rôties et certainement des notes houblonnées qui vont à la rencontre de notes chocolatées. En bouche, une facture corporelle agréable. Un apport de bulles qui m’est convenable et une texture huileuse. En finale, des notes de torréfaction et des houblons qui se réunissent pour donner une douce amertume. Une proposition facile à boire et bien appréciable.

Bottle: Poured a pitch-black color stout with a large dirty brown head with good retention and some good lacing. Aroma of roasted malt with notes of bitter black chocolate and light green hops notes. Taste is a mix between medium roasted malt notes with some bitter black chocolate with light lactose notes and some light green hops notes at the end. Body is quite full with somewhat of a creamy texture and good carbonation with no apparent alcohol. Not the most extreme version of the style but still well done and quite enjoyable.

Note: my bottle was 8.9% rather than 9.7% noted here. A dense and voluminous sticky tan head thrones on top of the pitch black liquid. Charry, heavily burnt aroma with a certain sugary hint, but leaning more toward coffee than chocolate. Its roasted malts bring a fair bit of acidity to the table, it and the esters intermingling together to suggest fruity apple-like notions, fairly unusual for a stout, yet somehow, it is fruity and acidic without feeling vinous. Thick bodied, but I guess not more than average bodied for an imperial stout, it got a good bit of residual sugars to its bones, but the acidity attenuates it down a notch or two. At 77 IBU, it is not overly bitter for a beer of its magnitude, yet it unveils resinous and citrus qualities toward its finish, although they come along with little bitterness, I guess again acting as a sweetness tamper. It drinks fairly easily, its roast/acidic combo bringing no astringency at all, but then again, it feels perhaps a bit simple for a 9% brew. And the heavy price tag that came along with it as an imported product would not justify to sacrifice many more satifying example on the same budget.
