COMMERCIAL DESCRIPTION
Danish: Cider fremstilles indtil videre en gang årligt af gårdens æbler. Som noget helt særligt er vores store sortiment af engelske cideræblesorter under udvikling og har de sidste to år udgjort ca. 50 % af mosten. Den anden halvdel udgøres af de mest velegnede spiseæbler som både giver god sødme og aroma i mosten. Cideræblerne derimod bidrager med deres helt specielle bitterstoffer, som er en uomgængelig del af ciderens egenskaber med mindre man foretrækker den slags cider, som bedst kan betegnes som en slags afart af en sodavand. Rigtigt cider kræver den rette slags æbler. Cider kan fremstilles på mange måder. Jeg benytter en fremgangsmåde som er ligeså gammel som kunsten at presse most af æbler. Den har sin historie i Normandiet og Bretagne. Først gennemgår mosten en blid enzymatisk omsætning og en let gæring, den skummer op med et imponerende brunt skum som fjernes ligesom bundfaldet. Herefter får den lov til at gære koldt og dermed langsomt indtil den stikke om igen en eller to gange i løbet af vinteren før den tappes på flasker. Kunsten er at sikre at gæringen stopper og samtidig efterlader lidt restsukker. Og alligevel er i stand til at gære lidt igen i flasken, så der kommer perler i drikken - lige netop så meget så den ikke bare skummer over når den åbnes. Alt dette er en kunst, som er overleveret i generationer der hvor cideren kommer fra. Kunsten er således at styre den spontane gæring, naturens egen mekanisme. Stort set al anden (industri) cider fremstilles som vin eller øl under meget kontrollerede processer med tilsætning af svovl, konserveringsmidler og pasteurisering og kunstig karbonering. 5,0 % alk. Bottle@relæ bar. Hazy brown golden. Small head. Low carbonation. Nice Apple fruity notes. Quite dry a little sweetness in the finish. Delicious.

750 ml bottle. Cloudy golden colour. Bitter winter apples. Alcohol shows through though. A little sharp finish, but overall a nice cider with nice apple flavours.

Bottle, 75cl corked, courtesy of Papsoe. 2008 vintage. It produces a nice, white head when poured, but it disappears at once, leaving an unclear, golden body without carbonation. Acidic, vinegarish apple aroma with some funky, cellary notes. Dry, a bit thin mouthfeel. Lots of apple flavor, with some notes of funk, cellar and yeast. A bit short finish, but pleasant, tasteful and refreshing. Not my favorite cider, but It’s one I could easily drink more of. 101016

750 ml bottle, 2008 version. Hazy, murky, orange-green body with just a hint of a white head. Aroma of mild, matured apples, fruity acidity and yeast with cellar notes. Flavor of real apples, sweet and acidic fruity, some bitterness, end up with a rather dry aftertaste. A bit raw, plain, authentic and very refreshing cider.

Bottle 2008 version.Pours deep golden with a fast dissipating white head.Aroma of funky yeast , apples , apple peel and sour fruit.Flavor is puckering sour with some residual sweetness.Very dry and astringent finish.Medium body,average carbonation.Nice dry cider.

Unclear medium yellow color with a small, virtually none lacing, fully diminishing, white head. Aroma is moderate apple, sweet apple, acidic apple. Flavor is moderate to light light heavy sweet and moderate acidic with a long duration, sour green apple, dry. Body is medium, texture is watery to oily, carbonation is flat. [20100508]
