COMMERCIAL DESCRIPTION
Forager Series.
Persimmon (Diospyros Virginiana) — literally, “fruit of the gods.” Sweet and savory, with natural notes of cinnamon and apricot, the orange-globed persimmon fruit truly is heavenly. But it’s not until after the first frost that persimmon turns from astringent and bitter to a luscious fruit worthy of the gods.
Once again, the annual wild persimmon harvest was amazing. The Forager community gathered over 550 pounds of native North Carolina persimmons, a harvest that began in September 2013 — well before the first frost. This bountiful yield produced a complex, fruit- forward winter ale. The beer’s notes of holiday spices come entirely from the native persimmon and the beer’s Belgian ale yeast.
In the fall of 2014, we’ll debut a brandy barrel-aged version.

750mL thanks to dfroms! Pours a clear, deep red. Yellowish head, fizzing out quickly. Weak retention. Nose is oxidized, all acetaldehyde red Apples. Taste is musty, Dirty, almost fishy. Fish Oil, red apples. Drainpour.

Draft. Hazy amber color, medium off white head. Aroma of slightly spur cherries, plums. Taste is dark fruit and citrus, light spice an a bit of tartness at the finish. .

Draught. Pours a somewhat clear brown color with a moderate off-white head. Taste is actually a little sweet, with a smell and taste of alcohol. Feels very warm on the palate. Not a huge fan.

Rating for 2011 vintage (tasted 30 June 2012--about 6 months of age). Vertical with 2010 vintage. From bomber into Lagunitas glass (on hand for tasting). Pours medium brown with a golden edge to it (Gibson tobacco sunburst). Head is fine, kind of big bubbles that surge up strong and fall just as fast. Aroma is super fruity: dubbel-like, but also apple juice, and some hard alcohol and dark fruits. Flavor is blend between intense fruity, alcohol warmth, and a rich, desserty sweetness. Overall nice dubbel-style beer with a good deal of complexity to think about. Maybe a bit overweight in fruit notes, but other than that, well done. Aroma: 6. Appearance: 3. Taste: 7. Palate: 3. Overall: 15. 2010 vintage (aged about 18 months). Direct comparison to 2011 vintage. Much better pour--head is taller and more persistent. Color is similar, maybe slightly lighter. Aroma distinctly more musty and sour. Palate a bit more lively. Dominant fruit notes still there. Cloying, where the younger batch wasn’t. Hard to tell if differences are due to batch variance or aging, but I definitely prefer the 2011 in this matchup. Aroma: 5. Appearance: 4. Taste: 6. Palate: 3. Overall: 13. Love the Forager concept and hope Fullsteam continues and expands it.

didn’t really get fruit notes from persimmon but definitely got the spiciness they talk about on the label. Seemed over-spiced to me but yet they didn’t add any spices themselves. perhaps these fruits were a bit too wild?

Copper colored pour. Aroma of fruit, spice, light tartness. Flavor has a nice person note, sweet spice, yeast, bready notes.

750ml bottle, #1779. Pours a deep copper that looks almost black in the glass with a small fizzy beige head that recedes to a small collar and collection of bubbles fed from the middle. Aroma is fruity with the persimmons definitely coming through, but sweeter than just the fruit, caramelized sugar maybe. There are hints of spices but very faint. Taste is also dominated by the fruitiness which comes is two waves - first, the slightly tart persimmons, second, the fruity esters.Then some spices, which are more prevalent than in the aroma, especially in the finish. Mouthfeel is medium bodied with soft carbonation, fruity and dry in the finish. This is my first Fullsteam brew and I’m really enjoying it. It’s certainly a unique take on a winter warner.
