COMMERCIAL DESCRIPTION
Fullsteam is one 50 venues — one for each state — selected by Northwest Cherries to receive 40 pounds of fresh-from-the-farm Rainier cherries. Northwest Cherries invited 49 participating restaurants (and one brewery!) to make anything they wished from this bountiful treasure. The timing was just right for Fullsteam…we were just about to barrel-age an Imperial Stout for the fall. Head Brewer Chris Davis set aside four kegs and blended in crushed Rainier cherry juice. And so, on July 11 at 4 P.M., Fullsteam will premiere Wanderlust, an 8.5% ABV Cherry Imperial Stout made with super-fresh, premium Rainier cherries.

Handbottle shared at the Sexual Chocolate release. Thanks dude! Jet black appearance with a thick beige head and spotty lace. Aroma is roast, cherry and some walnut. Body is very viscous. Chocolate and cherry with hints of coffee. Dry finish.

On tap at the brewery, and very much enjoyed it on its maiden voyage (and this aside from the fact that there were wee samples of cherry turnover made with the leftovers). Dry and dusky looking dark brown, slightly oily but with a nice medium carbonation and tan head. Aroma was initially quite toasty, giving a good sense of the base beer, but the fruit soon emerged. Nice full mouthfeel, just enough carbonation, and nice semi-dry finish. Berries are very full and fresh, with a medium tartness that contrasts well with the mellowed roasts. Very well done brew, probably FS’s best to date.

Viscous jet black pour (garnet hues if you look closely) and a fluffy chestnut colored head. Aroma is very similar to a chocolate covered cherry. Very nice. For an 8.5% stout I was expecting a much thinner body nope, velvet cream. Quite a complex beer. Bakers chocolate, roast, espresso and dark fruit. The Cherry was way more prominent as it warmed. I’m curious if any of this landed itself into a bourbon barrel and will we ever see the base beer?

Opaque black pour with copper edges and one finger of light tan head. Nose shows a light coffee roast with notes of java and soy sauce. A lightly sweet and acidic cherry skin character comes through. Doesn’t quite feel like an IS. Otherwise its a nice stout with a good chocolaty coffee character and some cherry notes.

Draft at the brewery. Dark brown with a small tan head. Pretty good retention throughout. Aromas of cherry, cocoa, metal/blood, roast, light smoke. Flavor is roasted malt, cherry, other dark fruits, light cocoa. Body is a little thinner than I’d like, but it’s certainly well balanced.

Draft from the brewery. Pours dark, pretty much black but with light showing through the edges. Seems like a slight reddish hue there, but it was too dark to tell. Well poured, with a nice light brown head, but that sucker stepped out of the picture pretty quickly. Nose shows roast first, then some chocolate and toffee and more roast grain. Some fruity sweetness somewhere back there, but not up front. No real cherry nose. Just a hint of cherry sweetness on the taste, but really more of a vague, bright acidity and some nice fruit sugars. Thin palate. Doesn’t feel very stout-like to me, though it looks and smells the part. One of Fullsteam’s best efforts.

Served in a cute little goblet at the brewery. It’s as black as can be with a pretty small, sand colored head. Strong aroma of toffee, black licorice, and some roasty notes. A cherry smell was noticeable, but not overpowering. It struck me as tasting somewhere between an imperial stout (rich coffee and a little dark chocolate) and a Baltic porter (more dark fruit and sweetness.) The cherries are excellently integrated, accenting the rich fruitiness of the beer rather totally dominating the flavor profile. It finished a bit hot for an 8.5% beer, but other than that, it was a fantastic, complex, and unique stout.

Great beer. Do not let the fact it is a cherry flavored beer advert you from trying this one. It is first and foremost a great imperial stout, with a light fruit finish.
