COMMERCIAL DESCRIPTION
Fermented with two saison yeasts and a bit of Brettanomyces, this beer puts the ‘funk’ in Funkwerks! Aromas of pineapple compliment the flavors of citrus and subtle earthy notes found in the dry finish. Brett character will continue to develop with cellaring.

750 ml bottle poured a clear yellow with a lasting white head. Aromas of bread, horseblanket, citrus, light pineapple and light earthiness. Palate was light bodied and crisp with a smooth dry finish. Flavors of bread, straw, horseblanket and light citrus with a smooth dry lingering funky finish.

Bottle. Pours hazy yellow with a large, frothy white head, long retention with excellent lacing. Aroma is heavy tropical fruity esters (pineapple, passion fruit), and fruity/floral hops with straw and meal malt and earthy yeast notes. Flavor is tropical fruity esters, light hops and bitterness, sweet malt and a dry finish with black pepper notes. Medium-light body and heavy carbonation.

Bottle 745 of 2100 thanks to a trade with ratman. Extreme effervescence. Huge white head that builds over a hazy pale straw hue with noticeably violent carbonation. Aromas are funky, earthy, floral and brett. Some light chlorophenolics. Leathery, damp leaves, pineapple, earthy, bay leave and tarragon. Phenols are medium, medium low malt (bready). Lightly green and herbal. A slight touch of an umami note. Flavors are dry, medium to low bitter, funky phenolics, brett, tarragon. Light plastic note in the mid palate. Bready, grainy, possibly some wheat. Mildly pineapple and star fruit esters. Dry balance Extremely lively carbonation, dry, nice and light elegant saison body. Surprisingly not nearly as complex as some of their simpler saisons. Enjoyable but not my favorite from this extremely good brewery.

Gold pour, loads of fluffy white head. Aroma is tropical noted and nice barnyard funk. Flavor has a hint of vanilla, some tropical fruit, horseblanket notes, earthy flavors. Not bad, a bit overcarbonated.

highly carbonated bottle. hazy, bright and effervescent gold body with a fine-bubbled, soft, lingering white head. waxy, salty, fruity, estery nose (dandelion, unripe kiwi, papaya, with some sort of chive/herb/bell pepper note) with some tingling phenols that appear coupled with the must. soft and smooth approach with tingling, growing acid late, washing the tongue and thinning the body. filmy and pasty late as well, with a lingering tingle of waxy acid complete with mousy red apple flavor (mouse urine smells intoxicating, by the way). my favorite text mentions ethyl capoate as waxy, fatty, fruity, pineapple and green banana, and that seems spot on. but this is a rather minor complaint. the pineapple is there, but it’s definitely the unripe, sour variety, as with the unripe and sour papaya, which again turn to unripe but syrupy/sweet honey, apple, pear, fruitcocktail, you name it, it’s esters all over the place once it washes across the palate. so what to score it? i’m all over the place, actually. it smells of dried fruits and minerals one second, then armpit and cheeserind the next. it certainly becomes more "fatty" and "goaty" as it warms. and there’s a warming sense of alcohol which seems to outweigh the stated 7.2%, but maybe that’s just me.

Tap @ Cranknstein Foco. Cloudy, light yellow orange appearance with a white head. Pretty funky, pineapple, mango, citrusy, a bit musty aroma. Tart, bretty, funky pineapple, tangy citrusy flavor with a fairly dry, estery finish. I enjoyed this one quite a bit. By the way, this is a completely different recipe from their Saison.

Sampled on 10/10/2012. Caution: this bottle was a fairly active gusher. This wild/sour ale pours a very hazy light yellow gold color from a 750ml bottle. Large sized white foamy head with good retention and nice lacing. The aroma is fruity, bretty and sweet, with some funk and must. A medium bodied wild/sour ale. The malts are fruity and sweet, pineapple and citrus. The hops are earthy and spicy. Very lively carbonation. Some horse blanket, some must, some leather, and some yeasty esters. A lots of dry and funk. Crisp, clean and refreshing. A nice bretty beer. Mouthfeel is full and round. Finish is dry, clean and crisp. Aftertaste is slightly tart and dry.

(750ml bottle) cloudy orange, thick lasting white bubbled head. Nose of pineapple, funk, Brett, earth, orange, cinnamon, smells awesome. Taste of umami, pineapple, funk, cheesy, Brett. A bit weird but smells amazing.
