Aroma of dark ripe fruit, Saison yeast, Bourbon, and some vanilla. Poured brown/dark orange in color with a large, creamy, loose, tan head that diminished a bit but lasted throughout, and became creamy and dense. Very hazy. Very sparkling. Very good lacing. Flavor is lightly sweet. Tastes of Saison yeast, bubblegum, slight oak, dark ripe fruit, and raisin. Medium body. Tingly, then medium dry texture. Average to lively carbonation. Malt, Saison yeast, dark ripe fruit finish is dry. 9%ABV is completely hidden throughout. Not that much flavor.

750ml bottle in a tulip. Pours dark brown with a lacy, beige head. Aroma of spicy yeast, light dark fruits, caramel and chocolate, floral hops, plus vanilla/oak from the barrels. Flavor the same with a great blend of everything. Average texture. A good Belgian style beer that has been Americanized in a good way.

Draft at the funk. Pours dark amber with off white head. Aroma is loaded with coconut, figs, vanilla, pepper, yeasty. Flavors are figs, yeasty, caramel, vanilla, coconut, subtle bourbon. Chewy feel. Sprity, yeasty, dry finish. Actually quite yummy if you like a big coconut barrel character, which I do!

3.75 A: Deep caramel brown color. Two fingers of frothy beige head. Retention is pretty good, especially for the ABV and a short ring of lacing is left.
3.5 S: Overall, I’m not a huge fan of Belgian beers being aged in bourbon barrels, but this one seems to have a good balance. The bourbon adds just a light leathery component with hints of earth and mineral. The base gives mainly dark fruits - currant, plum, raisin, figs, and dates. Molasses, caramel, and brown sugar. Oak and vanilla underneath. It’s good, but I’m not sure the barrel makes this any better.
3.0 T: The taste sees the bourbon take a larger role. Instead of complementing the brew, it interferes with the base flavors. It just doesn’t work. Boozy with leather and mineral. A moderate amount of astringency as well. The dark fruits found in the nose are there, but they fall second to the bourbon. Same goes with the molasses, caramel, and brown sugar.
3.5 M: Light to lighter medium body. Good spritzy carbonation. Nice creaminess. This would be great here, but the astringency lingers on the finish.
2.75 D: Another example of a perfectly fine beer being overrun by a barrel. Belgian and bourbon rarely works well and this is just another example of this.

Tap at Tap N’ Handle in Ft. Collins. Hazy brown pour with a white head. Nose is dark fruit. Taste is really fun, dark fruits, some funk and a touch of tart with a big woody and bourbon finish.

Pours dark with a tan head. Aroma is raisin, caramel, aged woodiness, candy, faint bourbon, and a hint of spice. Taste is raisin, malts, yeast, woody, caramel, toasty, and a hint of bourbon. Finish is smooth, creamy, and slightly chewy. It has a lingering sweetness. Really nice strong ale.

Funkwerks Dark Prophet: Serving: Draft at Black Squirrel. It pours almost black with a small beige head. The nose is heavy with stone fruit, bourbon, and all around booziness. The flavor has some nice wood notes, lots of dried fruit, plum, caramel, and plenty of bourbon. Medium to full body that’s lightened by the abundant carbonation. Interesting and good, but not one I would come back too.

UPDATED: APR 13, 2013 Tap at Hops and Pie. Plays more like a quad with dark forest fruits (blackberries, predominantly), brown sugar, and some bourbon on the nose and finish. Bourbon is subtle and well integrated. Almost chewy palate. This was the 2nd batch (’13). Interested to see how the original batch in the cellar compares.
