COMMERCIAL DESCRIPTION
Leuven was produced similar to a Berliner Weisse. After running the wort off into the kettle, we seeded with lactobacillus overnight, before bottling. We then added Saison yeast and Brett C to the fermenter. The result is a refreshing tart saison with a massive citruy pineapple aroma with a hint of apple and clove. The flavor is noticeably tart without being overly sour. More pineapple and citrus flavors give way to a bit of earthy wet hay at the finish.

Draft, pours hazed straw yellow with white head. Aroma has strong lactic acid, musty, floral, grainy. Flavors are tart lemons, lactic, musty, wheat grainy finish. Refreshing.

Hazy straw pour with a thin white head. Nose has a little lactic sourness with some hay and grains of paradise. Flavor is a little light but has a nice fruity tone that’s dry and dusty with a touch of sour tones, and passion fruit/grains of paradise tropicalness. But mostly dry sour dustiness.

Drank a ton of this while in FoCo, and got a few more bottles to bring home....annndd, the are gone, and I want more. MORE NOW. Pour on tap was slightly less cloudy than the bottle, which was a cloudy with a spare white head. Aroma is just amazing. Lots of lemony, earthy, salty goodness, wet wheat, lots of tart citrus, yeast. Taste gets a bit muddled from the yeast character (I noticed this significantly more on the bottle pours than the pours on tap), but still is packed with bready, earthy, tart goodness. Citrus throughout. I really, really like(d) this beer, and would drink this over most anything I have had recently. The amount of flavor packed into this tiny (3.2?? WTF??) beer is freaking phenomenal. Not really a saison, not really a berliner, but downright delicious. Any FoCo folks want to send me some more?

Draft at Funkwerks in Ft. Collins. Nice take on a Berliner. Soft tartness, citrus in the finish. Clean and crisp - very nice!

UPDATED: MAY 30, 2013 On tap at Funkwerks. Yellow and hazy with a white head. Fresh, citrus, lemon and tart aroma. Similar flavor, tart and crisp with carbonation. Light body with a smooth thin feel. Very refreshing.

Unclear matt light yellow colour with a large, frothy, good lacing, fully lasting, white head. Aroma is light malty, wheat, moderate yeasty, citrus, fruity citrus. Flavour is moderate sweet and light acidic with a long duration, tart, citrus, lacto, peppery (white pepper). Body is medium, texture is watery, carbonation is soft. [20130111]

Bottle @ Fonefan. Cloudy yellow body with medium white head. Aroma is malt, yeast, peppar and spices. Flavor is malt, yeast, spices, herbs, clove, hops.

Pour on tap at the CO rare beer tasting 2012, hazy yellow pour with white head, aroma brought notes of slight vanilla, corn, hints of tart lemon, slight grain, biscuit, bread, hints of lactic acid as well, pretty nice smelling. Taste is a mix of sweet corn, vanilla, hints of biscuit, slight lactic lemony notes, hints of funk but pretty clean, finishing slightly tart, slightly bitter, slightly dry. Not bad, but missing a bit of something.
