Of all the breweries I visited in Ft. Collins, this one had the best beer, and this beer was the best of the best. Aroma was typical Saison - lemongrass, jasmine, caramel, straw, hints of spice from the yeast, and with a higher abv of 8%, definite alcohol notes. Flavor is rich, slightly sweeter and more yeasty than a standard Saison style, but still with pear or green apple flavors. They claim tropical fruits like passion fruit or mango, but honestly if those existed at all it was only because of the strong, souring effect of the saison yeast, and I think standard fruit is more honest (in other words, there is no fruit in the beer, and it’s not particularly "tropical" - it’s just marketing.) Dry finish with a lingering, slightly bitter aftertaste. Mouthfeel was slightly warm - the alcohol is definitely detectable. I definitely bought a few bottles to bring home to AZ.

Pours a hazy dark golden orange color with golden tangerine hues and a one finger white foam head that slowly settles into a lasting ring. Sporadic spots of lace left behind.
Earthy, slightly funky aroma with the earthy citrusy hops complimenting the saison yeast. Hints of hay,straw and grass as well as some zesty, peppery spice, lemon zest, apple, pear and citrus, notably pear, mango, pineapple and papaya. slight sweet alcohol presence.
Medium bodied and fuller than expected yet it still manages to be light and very drinkable. Slightly bitter and dry up front with the earthy hops complimenting the zesty, peppery spice. Hints of coriander and lemon peel with some Bready yeast that adds fullness and complexity. Sweet alcohol toward the finish but abv is very well masked. Lots of light and tropical fruit, especially apple, pear, banana, mango and papaya. Excellent balance and incredibly flavorful. One of the best saisons I’ve ever had.

This one's really great! Lots of fruity notes of stone fruit and tropical aromas. Also some yeast and dough smells round out the burst of aroma. Pours a golden color slightly cloudy with nice lacing. Taste is sweet with fruity hop notes a smoothness and some banana yeast characteristics too. Great finish.

A very nice saison, filled with tropical fruit and belgian yeast aromas. Spicy, tart, and pungent, with a dry aftertaste. Medium bodied.

Draft at Funkwerks. Pours a very attractive, lightly hazed deep orange. Nose is really great, lots of tropical fruit, gooseberry and white pepper. Really fresh and dynamic. On tasting, the malt profile works really well here and the yeast doesn’t wash out the hop character. Lots of great fruitiness and light alcohol notes. Biscuity and dry malt finish as well. Truly a fantastic saison. Might be my favorite from funkwerks.

750ml bottle. orange pour with a huge rocky 4 finger white head which settles nicely to a thin lacing. tropical fruit nose with pepper and lemon. medium to full body with spices, lemon, grapefruit, orange peel, light pineapple and mango. crisp and dry. semi-sweet finish with pepper and a nice lasting tropical fruit bitterness. great Saison!

Cloudy straw-yellow with a rocky white head. Wonderful intense aroma of sweet and yeasty fruit, pineapple, citrus, mango along with quite a bit of spiciness, ginger and clove. Chewy, sweet and tart on the tongue with a long drying finish. Absolutely beautiful.

Sampled at Funkwerks on 9/30/2012. This saison pours a ison. Nice mix omedium orange gold color from the tap. Small to medium sized white foamy head. The aroma is fruity, sweet, mango. Peaches and spicy. A medium to full bodied saison. The malts are fruity and sweet. The hops are herbal and spicy. Nice carbonation. The mango and peach flavors are subtle and not overly sweet. Nice yeast. Good carbonation. A touch on the sweet side, but still a very enjoyable drinkable saison. A nice mix of flavors, fruit, hops, spices and yeast. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet.

750ml bottle, Hazy orange, big head. Malty citrus nose. Tropic is misleading, i’m not getting pineaple and mango. Very good flavors, slight amount of funk and tart. mostly citrus. Great mouthfeel. This is a good example of what I think a Saison should be. Thanks Mark for the Birthday present. I pick up some grapefruit in the back ground. I will get more!

The pour is a hazy, effervescent, burnt orange color with a full, white, creamy head which settles to a moderate froth leaving scattered Belgian lace all over. The nose is pleasant, clean, and inviting with clean florals, white pepper, ginger bread, doughy/estery yeast, cardamom, and tropical fruit (mango, guava). The flavor is still filled with tropical fruit undertones (mango and guava still), very yeasty with doughy notes and pepper phenols, ginger and cardamom, soft malt backbone, acidity is low to moderate with only a slight tartness, bitterness is moderate, and bitter floral notes moving to the finish. The palate is nearly full, creamy, silky, and lively. The finish dries out but lasts for some time leaving bitter floral notes, bitter oranges, pepper still, and a lingering cardamom note. Where to begin with this one... The tropical notes were amazing and completely complementary to the other notes, the house yeast derives some fantastic flavors, and the malt base was incredibly soft and supporting of everything else. The palate was fuller than most and the acidity/sourness was much lower than the norm for saisons but it worked well for this beer and for me. This was a very finessed beer with clean and fresh aspects as well as perfect balance and harmony between sweetness, bitterness, acidity, and phenolic spice. One of my favorite new breweries and so close to home.
