COMMERCIAL DESCRIPTION
Our first summer seasonal is fermented using our house saison yeast blended with a wild brettanomyces yeast strain and then aged on whole organic Turkish apricots for one month. The result is a beer that is perfect for tasting on our back porch this summer. But watch the alcohol as this is stronger than most people think!

Hazy golden - soapy lace - nose of dried herbs, wildflower, apricot, lightly peppery phenols - no Brett in the nose - flavor is tangy, with only light apricot - lavender, wheat - light notes of white wine - gets more dry and crisp through the middle - flinty - only a hint of earthiness - very mildly developed brett in the finish in thr form of mellow horseblanket - needs some time for the Brett to develop, but fairly refreshing and tasty even now.

Tap at funkwerks. Pours a hazy peach color with a decent white head. Aroma is first solvent and a bit harsh then opens up to some apricot skin some tartness and some decent fresh crwcker notes. Flavor is better less to no solvent, light phenolic, good sour apricto, skins, pitty, mineral, big fresh fruitiness with saison yeaty ohenos, and a tart almost sour finish.

On tap @ brewery. Yellow orange appearance with a white head. Nice, somewhat funky apricot dominated nose over a light golden Belgian aroma. Pulpy apricot, sweet fruity, Belgian golden ale flavor. Pretty tasty.

Draft at the brewpub. Pours a hazy dark golden yellowish-orange color with dark banana hues and a frothy one finger white head that slowly fades into lasting cap. Spots of soapy lacing left behind. Very complex aroma with dry, earthy Brett that’s slightly funky complimenting the earthy saison yeast. Huge blast of apricot as well as some pale malt along with hints of grass, straw and other light fruit. Medium bodied but still light, crisp and easy to drink. Nice balance of dry Brett, sweet fruit and earthy funk. Not too tart or puckering. More dry than anything with earhy funk, straw, hay and a ton of sweet apricot sweetness at the end. Not realy cloying with a dry finish. Well balanced and extremely quaffable.

On tap at Funkwerks poured a cloudy amber with a small lingering off white head. Aromas of apricot, straw, light earthiness and light spice. Palate was light bodied and crisp with a dry finish. Flavors of apricot, wheat, yeast, light spice ans light funkiness with a smooth dry lingering apricot finish.

UPDATED: JUN 24, 2011 draft. gold with light haziness. dried apricot and sour peach rind nose with musty baked crackers and light yeast powder / sawdust. somewhat chewy and round, and at over 7% it feels slow, weighty. muted flavor of apricot skins (flaky and dry) with strong flowery / dishsoap esters. second try after some more conditioning time wasn’t really so good... smelled plastic-like with noticeable fusels.
