The conception and naming of this beer happened in one fell swoop. Unsure whether to offer a light session beer or a fun ball-buster as our warm weather seasonal, we decided on a beer that would be “a big, fatty boombalatty” version of a Belgian white. And away we went, taking a recipe for a white beer and ramping up the grain bill by 50%; we dropped the amount of wheat by 75% to keep the beer rough around the edges. We bucked tradition by steering the bitterness in the direction of a pale ale, and coupling hops with coriander in the fermenter. The resulting beer gives you all the bubblegum goodness of a big Belgian, with enough crispness to cut through the sweet profile, thus making you want to sip it again and again. Dangerous, indeed!

Bottle. Pours cloudy amber, large of white head, creamy, nice lacing. Aroma is yeast, coriander, wheat. Flavor is the same, light sweet, lemon peel, pepper, coriander, wheat, lemon. A bit of zesty bitterness. Medium body., creamy.

Tap. Pint glass. Typical unfiltered wheat orange appearance. Mild citrus aroma. Nice body, not too sweet. A nice summer beer that a guy can order without feeling weird.

Man this beer is so dope. Really great sweet Belgian yeast strain used on this one, give the beer a nice character. Earthy with notes of biscuit, hay, wheat, and delicious crisp finish. Yes!

On tap at Bangers and lace. Sweet wheat aroma. Pours cloudy orange. Flsvor is creamy slightly bitter orange. Light bitter finish. Good interesting wheat brew.

From tap at Republic. Pours hazy yellow with a small white head. Aroma is estery and fruity. Light toasted malty. Estery to phenolic. Mild herbal, estery and light spiced. Bitter and dry finish.

Draft on tap at Dotty’s (Madison, WI). Birthday/VDay Dinner with the missus. Pours a murky hazed amber pour, darker in body with some gentle glow, orange gold, some homemade applesauce. Cakey white head films well, laces ok. Aromas are gentle sweetness, pear and apple, kisses of yeasty and a gentle clove. Mellow honey sweetness, touches of melon, doughy malts. Touches of bubblegum, pear, and gentle doughy grainy malts. Mellow Belgian yeast influence on the nose. Initial shows a lighter end of medium bodied, touches of sweeter bubblegum, dough, and fruit waft into the fold. Touches of coriander, mellow Belgian yeast, touches of citrus dance in. Clove and coriander mix, coriander hitting the palate better as we get further in. Gentle bubblegum, dryness as we move back. Some grassiness, mellow yeast, touches of spice, gentle apple and dry grainy malts. Loses some of that sweetness as we move past the middle, hits with just a touch of heat to let you know this beer is a bit bigger than you may have expected. Overall, not usually a style I relish. This seems well constructed though and certainly hit the spot for me this evening. Solid.
