The conception and naming of this beer happened in one fell swoop. Unsure whether to offer a light session beer or a fun ball-buster as our warm weather seasonal, we decided on a beer that would be “a big, fatty boombalatty” version of a Belgian white. And away we went, taking a recipe for a white beer and ramping up the grain bill by 50%; we dropped the amount of wheat by 75% to keep the beer rough around the edges. We bucked tradition by steering the bitterness in the direction of a pale ale, and coupling hops with coriander in the fermenter. The resulting beer gives you all the bubblegum goodness of a big Belgian, with enough crispness to cut through the sweet profile, thus making you want to sip it again and again. Dangerous, indeed!

Pours a clear golden color with about 0.25 in of head. Malty flavor with banana and bubblegum notes. Not a bad beer but it seems to suffer from a bit of an identity crisis.

This is my new favorite summer beer. We got it at a little bar in Spring Green while passing through. It was very smooth and not too fruity, great banana bubblegum taste.

A lighter amber color with a whitish head. Strong flavor with some sweetness, but a distinct alcohol tint to it. A bit of spice, fruit, and yeast.

This one was really good. On tap at Hawthornes in Philly. Nice spicy aroma from a golden pour with a big head. The flavor had a nice sweetness along with a nice spiciness. A bit of a hop bite at the end. Nice and dry with a good after taste.

12 oz bottle at a friend’s party. Cloudy yellow, nice long-lasting head but a plastic cup won’t yield to much lace. It shows a nice banana ester nose. Mixes hefeweizen with Belgian wit, a bit of bubblegum and malt. Taste is slightly sweet with fruit esters and a bit of wit spice. Slight funk.

Bottle from O’Reilly’s. Orange tinged body with a token head, and a few drops only of lace are later left. Yeast with some fruit and spice aroma. Above average mouthfeel but also aggressively carbonated. Good drinkability, corriander and pepper, and secondary fruit and tanginess. Decent take on the style.

Pours a slightly cloudy golden amber with a huge head of white foam mostly lasting with lots of tiny bubbles. Nose is citrus and spices. Taste is very flavorful with spices, citrus and hops complete with a bit of zing. Finishes on a fairly dry hop note. An excellent Belgian- not as sweet as most. To be enjoyed with white cheeses, apples and crackers.

Serving glass: Poured from bottle into Chalice. Appearance: Very cloudy orange with bubbly white head and lacing. Aroma: Strong banana and bubblegum, with light clove, coriander and wheat. Some alcohol. Taste: Sweet upfront with a dominant banana and bubblegum flavor. Dries up and turns spicy and hoppy at the end, with pepper, clove, coriander and a nice bitter bite. Despite everything happening at the finish, the banana still lingers. Palate: Moderately high carbonation, medium body, very dry finish. A little bit warming. Overall: Very nice complex and refreshing... something. Not a typical Belgian at all, as it resembles a Hefeweizen more than the claimed base Witbier. Regardless, it is delicious, and perfect when a stronger Summer seasonal is desired.

This beer is really pretty decent, but still nothing much to it. I like some more complexity.
