Bottle thanks to Mark. Pours with a a burnt brown hued body and great alcohol legs. Great clarity. Aromas are of maple, burnt sesame seeds, mushrooms, nutty, earthy, umami, light brown sugar. Flavors are of maple, molasses, nutty, cashews, syrupy. Feels weighted and boozy but decently balanced. Excellent Koshu.

This bottled Sake from rbsg #51 poured a head of medium sized tan colored bubbles that were quickly diminishing and left behind a hazy brown colored body. The strong aroma was of vinous licorice. The vinous mouth feel was tingly at the start and at the finish with a strong vinous aftertaste. The strong flavor contained notes of dark brown sake like notes. A decent one that I would consider drinking again.

500mL thanks to KyotoLefty at Woodshop 7. Pours a dark soy color with HUGE legs on the snifter. Very dark, viscous. Nose is incredible: umami explosion with soy, truffle, shitake mushroom, steak fat, smoke, bacon, and more that is hard to describe. So savory you want to devour it like steak. Taste is very clean, neutral, nutty with mushroom, baked apple, bitter, earth, rustic bread crust. Amazing palate- super clean and quick. Delicious. Perhaps the most umami character I’ve ever smelled in my life. Life changing experience here thanks to Mark!

bottle at RBESG 2011 Grand Tasting ... THIS WAS THE THINK I WAS MOST LOOKING FORWARD TO ... deep red brown ... soft woody rice nose ... very intence nose ... dark sweet rich hints of MUSHROOM (i dont like mushroom) hint of soy.... definitly more mushroom as i get further in ... i didnt like this

Bottle @ RBESG 2011 Grand Tasting at Dean Swift, Tower Bridge SE1. Pours a clear brown color with no head. Has a fruity spicy woody aroma with hints of dark fruit. Fruity sweetish spicy woody flavor. Has a sweetish woody toasted spicy finish.

Bottle at RBESG 2011 Grand Tasting at The Dean Swift, London. Pours clear amber. Big sugar nose, rich cake. Very sweet flavor, notes of brown sugar, light booze. Full bodied with soft carbonation. Warm finish, toasty cake, some ripe fruits and dark leather. Superb stuff. Best sake I’ve ever had, no question.

Rich sweet aroma. Dry grainy body, but tons of sugar too. There’s a fair bit of booze in the aroma too. It’s a nice tipple to sip, but hard to rate alongside beers. Easily the best sake I’ve ever tasted.

Unclear medium brown colour with virtually no head. Aroma is moderate to heavy raisin - plum, spicy, dark dried berries. Flavour is light heavy sweet and light acidic with a long duration, dark raisin, spicy, plum, mushrooms ! Body is medium, texture is oily, carbonation is flat. [20110807]
