COMMERCIAL DESCRIPTION
Gekkeikan Sake (USA) brews its newest premium Sake, Haiku Premium Select, using Japonica variety California rice, specially patented yeast developed in Kyoto by Gekkeikan Japan, and high quality water from the Sierra Nevada mountain range. Haiku’s innovative fermentation process proceeds at low temperatures for extended periods. The result is a delicate, slightly dry sake with a light aroma reminiscent of orchard apples. Haiku can be enjoyed by itself or with fish, poultry and vegetarian dishes. It also compliments a wide variety of ingredients, such as those found in fusion cuisine. Enjoy Haiku chilled or over ice.

UPDATED: APR 25, 2007 The aroma is ricey, grassy, and woody. The appearance is virtually clear. The flavor is like the aroma and very mild. The palate is slightly oily but also watery. I like this one pretty good. It’s real easy to drink.

Served cold at Sushi Haru in Kansas City. Appearance is clear. Aroma is a bit earthy and a touch of fruit sweetness. Taste is actually quite bland, with the sweet/citrus and twigne of a bitter alcohol finish. Pretty boring, but I basically know nothing about Sake.

Almond paste colored (off-white) with short-lived legs left on the glass. Some fizziness curiously sets up on the edges of the glass, but is also short-lived.
Very muted, nutty, heavy aroma. Not that it seems all that bad to my nose, just not the lighter, more perfumed version. Sweet coconut, light red apples and a pinch of raw honey seem to all add sweetness without ever becoming aggressively so. Some light alcohol warming on the end, but it trails off and is folded back in to the nutty-sweet notes.
Very nutty flavor mimics the nose. Boy I suck at rating sakes....but the texture seems round and almost nigori-like. Not exactly creamy and thick, but soft and more substantial than many other sakes I’ve had. Not that that is necessarily a good thing. Vanilla, coconut and a touch of alcohol round out the finish. Bit of paper-like dryness/blandness, but otherwise seemingly pretty clean and inoffensive, with a pleasant, if uncomplex sweetness.

some really nice pineapple notes in this sake. Reallly crisp and dry. Smooth and balanced sweetness to it.

375 ml bottle. Clear and still appearance. Floral, fruity, and herbal aroma. Fruity esters, lightly herbal flavours with an alcohol finish. Smooth, medium bodied, light burn. Decent but simple.

750ml bottle: Pretty much clear in appearance. Nose has vermouth, white wine, coconuts, apples, alcohol. Taste is quite smooth and mild. Initially mildly bitter, but then goes to light cheese, mold?, vodka, with a slight alcohol burn. Overall not very assertive flavors, pretty bland.

very pale in appearance with a strong smell of vodka and white wine which is what this reminds me of except much stronger. alcohol burn and a mouthful of vodka. a lot stronger than i expected. i bought 2 different bottles. i’m afraid to taste the other brand.

Clear appearance. Aroma is coconuts and oranges. The flavor is almost non existent but a slight citrus and smokey flavor is detectable. Hides the alcohol extremely well. Not a bad one.
