Courtesy boboski. Served chilled. Clear, with faint, pale yellow hues. Aroma is sweet, floral, and yeasty. Sweet, rice syrup background in the flavor with floral highlights, dough, and faint citrus. Slick, full mouthfeel that is a bit cloying. Smooth swallow with a clean finish. Alcohol does not interfere. Nice, but I found to be a bit too sweet.

Sample from a Sake Flight at Fuji Jade Garden, State College, PA. This was interesting. Aroma carried a lightly phenolic or ester profile, as if in a Belgian yeast sense. Pours clear. In the mouth, this becomes more distinct, with some minerals, peppery notes, lemon rind and brandy-like mature fruit. This is all veiled by a heavy sugar content. This is dense and strong. Finishes on plum ripeness.

0.72 litre bottle bought at the brewery in Kyoto. Pale straw colour. Mild, slightly sweet and yeasty aroma. Peppery flavours, with some dark fruit, very warming alcohol, bready yeastiness. More powerful in the mouth. Cloying mouthfeel, hints of graininess. Nice complexity, starts soft, but soon shows a tougher side.

Bottle: clear, no legs. The nose is light but very dusty, like wiping off an old shelf into your face, along with that, there’s some apple and kiwi notes. The flavor is clean, mellow impact and a very brief tail. Minimul umami and a touch of alcohol. Good but disappointing for a junmai daiginjo.

Glass at Japanese Pavillion at Epcot. Pours clear with a hints of yellow. Aroma is rice, yeast and melon aroma. Taste is chewy rice, yeast and more fruit notes. Really nice.

Bottle @ home (300mL) picked up at Wilbur’s for $14.99. New sake style tick and a point in RBSH3. Pours a very clear, just a touch yellow tinted appearance with no head. Sweet green apple, pear, sticky rice, a touch candy-like aroma. A little bland and watery but very smooth. A touch of booze on the finish but mostly just a light apple/pear, slightly grassy flavor. High boost.

Sample from a 300 ml bottle, served at about 10 C. Clear appearance with a slight yellow tinge. Herbal aroma, perhaps some light estery notes. Lightly fruity flavour, but the alcohol finish and light burn is the most notable thing here. Lightly creamy mouthfeel before the burn hits.

Bottle courtesy of OFortuna. First sake rating. Crystal clear with just a hair of yellow hue. Aroma difficult to describe, perhaps light rice mold, yet not unpleasant. Mild flavor unlike the aroma. Smooth and slick on the tongue. Medium bodied, not quite dry. A little alcohol warming. Slightly sour, dry finish.

Pour clear like water. The aroma is fruity, pineapple, apple, some booze. . The flavor is sweet fruit, light fruit, light booze. The finish is sweet fruit, light booze burn. Pretty enjoyable.
