Notable Facts: Each year, after the temperature drops below 14 fahrenheit, they build an Ice Dome outside near the main kura building. It is basically an igloo inside of which the temperature stays about 28 F, with 90% humidity and no wind The low temperature means "nasty bacteria" cannot survive, and it allows them to make clean, pure, ultra-premium saké. Additionally, they separate the clear saké from the fermenting rice lees not by pressing, but rather by putting it into canvas bags and allowing the saké to drip out slowly overnight, with no pressure at all applied to the mash. The Cadillac of Daiginjo sake is Shizuku-style sake, the equivalent of wine made from free-run juice.

DLD ’08: Bottle shared by moejuck: Pours clear with some pretty solid legs after a swirl. Aroma, earthy, rice, some fruit character to it. Flavor, rice, some spices, grains, almost bready, fruity notes. The alcohol was pretty evident, and while I’m not a sake fan this was by far the best one I’ve tasted.

Another stellar Saki from the zipps cdrew. Floral and fruit notes on this beer with sake mold. Sweet caramel with a subtle mix of fruits and rice.

Big thanks to Bman113VR for brining this treat over. Pours a pale yellow color. Nose is fruity maybe blueberries and almost no rice. Taste is sweet and incredibly smooth. Feels like fresh pure spring water. Nice soft and thick mouthfeel. What an amazing sake.

Aroma is extremely fruity. Golden hued body. The taste is so smooth it hurts. Fruity, but subtle, a perfect balance.

Aroma has licorice, plastic, vanilla, ice cream. Clear of course but not as bright water, perhaps a hint of color there? Tough to tell from a ceramic sake glass that casts shadows. Alcohol in the nose but only when you hold it in your mouth, otherwise for raw aroma and flavor there’s nothing there but smoothness. It dissolves like an angel cake. What a special drink.
