Unfiltered.
De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

Bottle purchased at Beverages for Less in Santee. Thank you Fredie for carrying one of the best lambic gueze I have tasted. Excellent sour but sweet too. Awesome.

A- Pours a peach color with little to no head, very clear. S- Smell is very sour, i get strong apple cider tones, definitely lots of funk, I don’t know if I am prepared for the taste. T- Taste is much better than I was expecting. Intensely sour, completmeted with subtle sweet fruit tones, not as much apple as I expected from the nose. M- Medium viscosity and very crisp, the carbonation is hard to judge because of the crisp bite of the sourness. D- This is a sipper for sure because it is so intensely sour. While saying that, I think while this would take a long time to drink a lot of, I could sip on it all night.

2 year old bottle. Pours a murky orange-brown with excitable but collapsing white head. Nose is major sour funkiness, leathery, citric, sherbety. Smooth if somewhat thin body, starting fragrant and flowery with faint sweetness before a muscular sourness prevails, ending quite smoothly. One of the more wild guezes I’ve tried.

Bottle 75 cl. Pours a semi-cloudy yellow/orange with a tiny and fading white head. The aroma is dry, bitter, sour and lots of farmhouse notes. The flavor starts out a bit sweet and then gets sour and bitter. A funky gueuze, but not as good as some of the 3 Fonteinen gueuzes.

Smaller corked bottle. Pours a perfectly clear deep gold with lively carbonation and a thin diminishing head. Aroma is initially cork, then some farmhouse funkiness, and followed by a ton of lactic sourness. Flavor is extremely sour and acidic, wierd sour-sweetness on the tip of the tongue kind of like sour patch kids. Some woody and earthy notes in the middle, and finishes bone dry with lots of sourness. Very nice overall.

Bottle shared with Carlus12. Nose is funky, cheese, hay, apples and cider. Pors a murky yellow beer. Taste is complex, minerals, apples, sour. Tatse is actually quite discilined and not as wild as some Lambics. Tasty.

barnyard aroma’s galore....leathery mouthfeel that I love......and damn I think this is a great initiation to someone(like my girlfriend) who loves flanders sours and needs to step it up at bit.......great beer!
