De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

City Beer, San Francisco 7/06. 375ml. Hazy golden/amber with large white head. Musty tart aroma. Pleasant tart musty flavor milder less vinegary than Cantillion. Good body welll balanced. Very good.

The beer is clear copper gold, moderately effervescent, and topped by a good two inches of bubbly head. Decent head retention and good lacing. Sour aroma – citrus and herbal. The flavor is a tart citrus, mainly sour grapefruit juice and lemon rind. A little cheesy funk is thrown in as well. Lighter body, with memorable acidic carbonation, and a dry finish.

Beer #100. Orange colour. White head that disappears quickly. Apples and lemon in the aroma. Some barnyard aroma aswell. Very tart flavour. Some apple taste too. Dry and crisp finish. This is a great beer.

Big sweet-tart like brett nose with hints of grapefruit, pineapple and a light smoke. Flavor is acidic but not overwhelming, flavors are balanced with citrus with a crisp white wine (grape) like finish reminiscent of a citrusy Sauv Blanc.

I had this one at the Steel Garden which is part of Bethlehem Brew Works. This is incredible as far as sourness and acidity. I sense hints of citrus and peaches and the palate is perfect. The carbonation is there but isn’t overdone. It is a pretty dry beer overall. With the sourness factor, you either love this one or hate it.

375 ml bottle. Golden apricot pour with a fizzy head. Aromas were very tart fruit. Flavors kept the extreme tartness. Almost exactly like carbonated grapefruit juice. Very Yummy

37.5 cL bottle. Crystal clear golden pour into my Champagne flute... more hazy on subsequent pours. Bubbles rose constantly, and a small layer of white head was maintained throughout the drink. Pungent aroma shot out of the bottle after the cork was pulled. Sour apples, wet leaves, aromatic cheese, lime, vinegar, and grapes... to name a few... hit the nose with force. Effervescent across the palate. Tart and sour throughout, with a high dose of acidity noted especially at the top of the throat. Sour apples, old flowers, lime, and a hint of leather came through in the flavor. Quite sweet for the style, but it worked very well. Dry vinous finish. Very complex, and surprisingly refreshing!

Bouteille 375ml. De couleur orangé et voilée. Nez de levures fruitées sauvages, sûres et acides (pommes vertes, moyen de citron et de pamplemousse, léger de poires vertes, notes de raisins verts et d’ananas) et également boisé (fût de chêne) avec des notes d’épices (poivre) et de soufre. Moyennement ronde en bouche avec un pétillement élevé et une texture légèrement crémeuse et rappelant le champagne. Goût de levures fruitées sauvages, acides (acétique rappelant le vinaigre) et sûres (pommes vertes cidreuses, pommes sûres, citron, moyen de pamplemousse et de rhubarbe, notes de poires vertes et de raisins verts, traces d’ananas) accompagné d’un goût boisé (fût de chêne) dès l’entrée en bouche auquel se rajoute progressivement un goût de fromage vieilli ainsi qu’un léger goût de levures épicées (notes amères et de poivre) et asséchantes vers la finale et accompagné d’une aigreur fruitée assez prononcée et des notes de soufre. Post-goût long et assez sec, aigre de levures fruitées aux notes amères (pelures de pommes, zest d’agrumes, léger de moût de raisins), léger de vinaigre avec des notes boisées et de soufre.
