COMMERCIAL DESCRIPTION
The base beer for the Italian Plum Lambic was our Hefeweizen. The hefe, yeast, plums and bugs were all decanted into retired oak wine barrels from the Round Hill Winery in California. Over 4 years, the yeast and bugs ate just about anything fermentable out of the brew and converted that to alcohol and other flavors that only a lambic can deliver. The intensity of the beer was such that careful "back bending" with more fresh beer was required. We did some blending magic with more hefeweizen. It’s way out there, but it’s not overwhelming.

Has a very prominent sour plum nose, smells slightly woody as well. The flavor is slightly muddles, and somewhat sour, with woody notes again, giving this a somewhat winey type mouthfeel. I think this is interesting, with just enough of a funkiness to please someone that likes lambics, I am not that person. It has never been my favorite style.
