Commercial Description:
Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added. Ondineke is an unfiltered top fermenting beer. It is soft, creamy, and of golden color. It is double hopped with the last real hops available from the region of Aalst (The variety is Hallertau Mittelfrüh). Ondineke has a positive taste evolution and the bottles are best kept standing in a cool, dark place. It is best before two years after the bottling date. 8.5 % alc.vol. makes this a beer to be savoured. Preferably Ondineke is to be served at a temperature between 6 to 10° C. Moreover Ondineke is at its best when served in the originally designed Glazen Toren glass.

White weak head. Amber colour. Aroma is malty, fruity with apricots, peaches and citrus notes. Flavor is moderately malty , fruity with ripe fruits and light wooden tones, ending in a balanced slightly nutty finish. Medum bodied.

75cl bottle at D.H. Pours muddy cloudy orange with a fluffy white foam. Yeasty and hoppy nose. Lots of fruit. Citrus and orange combined with the yeast. Very tasty. Vinous and sweet. Incredibly nice.

750 ml bottle. A very hazy dark golden beer with a medium sized, creamy and persistent whiote head. The aroma is nice and well balanced, malty, hoppy (flowers), yeasty and fruity (orange peel, light banana). The flavour is balanced too, quite sweet with light acidity. More spicey than the nose. Again lemony and orangey, hops are present. Medium body, lively carbonation, dry (but less than usual for a tripel) long finish with medium bitterness. Complex and refined, with light acidity that works well. A beer that has its character. Very nice.

Signature Belgian look, a dark golden body with a large, frothy head of foam that leaves spotty lacing and lasts well. Nose is the weakest part of the ale, but still shows some nice notes of herbs, along with a variety of yeast derived from notes. Flavor is brilliantly balanced, full of subtlety and nuance. Mouth feel is silky and wet, and glides down the throat. Very nice ale. The Belgians do it the best, period.

2006 bottle shared by EDA. Gushing after all these years, with a great head on the pour. Very cloudy yellow. Wet, dry, dank, ginger bread, very bready aroma, sweaty and delicious and deeply complex. Great body, perfect carbonation, super easy drinking. Nice breadiness and a touch of acid, very yeasty. Delicious. Another perfectly aged Belgian. In a night with a lot of other hard hitters, this one undoubtedly came out on top.

Bottle at Andy’s place: Cloudy golden pour with a dense white head. Herbal aroma- flowery, honeysuckle-like with a spice note of basil? Rounded carbonation, creamy. Interesting flavor- it has an earthy touch of acidity which I can only explain by saying sun-dried tomatoes? Subtle tartness mingles with a touch of vanilla in the back from the malt. Has a later nut skin (husk) hint. The finish is fairly dry, making it very drinkable. Nice and individualistic Tripel.
