COMMERCIAL DESCRIPTION
Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added. Ondineke is an unfiltered top fermenting beer. It is soft, creamy, and of golden color. It is double hopped with the last real hops available from the region of Aalst (The variety is Hallertau Mittelfrüh). Ondineke has a positive taste evolution and the bottles are best kept standing in a cool, dark place. It is best before two years after the bottling date. 8.5 % alc.vol. makes this a beer to be savoured. Preferably Ondineke is to be served at a temperature between 6 to 10° C. Moreover Ondineke is at its best when served in the originally designed Glazen Toren glass.

24 aug 2007 bottling date. Hazy orange/yellow with a rocky white head. Big earthy, yeasty aroma with citrusy soft mandarin. Medium body and lightly carbonated. Good tripel flavors are subtle, lightly sweet pale malts, and earthy yeast, with lightly sweet fruit flavors of mandarin and apricot flesh. Little to no spices here, something New World brewers of this style should make note of...

On tap-Poured a cloudy golden color w/a white foamy head. Light, fruity, spiced aroma. Flavors of yeast, cane sugar, roasted malt, dark fruits, figs, & spices. Spices give it a lot of kick, good after dinner warmer. long spicy finish.

75cl bottle at D.H. Pours muddy cloudy orange with a fluffy white foam. Yeasty and hoppy nose. Lots of fruit. Citrus and orange combined with the yeast. Very tasty. Vinous and sweet. Incredibly nice.

Bottle was ready to open right away as it foamed over upon opening. Pours a slightly hazy golden color with a huge white head. Very spicy nose with hints of ripe fruit and spice. Nice balance on the flavor between spice and sweet. Nice flavor with a great light hoppy finish.

Flaske: Flot let uklar gul øl med et stort klassisk trippel skumhoved. Duft af gær der giver den en sødlig frisk krydret lugt. Smagen er igen frisk og klassisk trippel. Sidder faktisk lige i skabet og er farlig drikbar da alkoholen er komplet gemt væk. Dejlig øl.

UPDATED: MAY 17, 2010 750ml: Wrapped in paper. My bottle didn’t have a label ,unlike the ratebeer provided picture: ....spices and fruit esters dancing on hay ...mellowed juicy sweetness ,herbaly ,earthy dirty dank notes. Cultured.

UPDATED: AUG 30, 2010 Bottle (Mar 2010 bottling). Head is initially huge, frothy, white, fully lasting. Body is hazy dark yellow, bottle conditioned. Aroma is lightly to moderately malty (toasted grain, cookie), moderately hoppy (flowers, herbs), lightly to moderately yeasty (cobwebs), with notes of honey, lemon/orange zest, mint/wintergreen/teaberry, gum. Flavor is moderately to heavily sweet, lightly acidic, lightly bitter. Finish is lightly to moderately sweet, lightly acidic, moderately bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. This sample is sweeter than my last rating in 2008, and it suffers a bit as a result. Needs more hop brightness (and preferably some cobwebby yeast presence too) in the nose, and better attenuation. Still a great beer, but less "tripely" than I would want.

Bottle. Cloudy golden beer with a strong but soon disappearing white head. The aroma is very heavily spiced, and the flavour is very strongly bitter, spiced and burn’t at the finish. Overall a nice very strongly flavoured Belgian Triple.

Bottled. Cloudy gold. Nose is spicy very yeasty and floral. Lots of dried fruitiness as well. Taste is much the same - dried fruits, flowery notes, light candi sugar, and abundant spice notes. Body is very bubbly but smooth. Finishes slightly bitter and yeasty with more flowers, dried fruits and dusty malts.

Golden with a big white head. Yeasty aroma, with fruit, spice, earth and minerals. Complex and clean. Sweetish malty flavour with a little musty, grassy touch. Good and bitter finish. Excellent.
