Our brewers love experimenting with their beer almost as much as they love drinking it. UPDATED: MAR 18, 2014 Bottle: Pitch black body with a slowly forming, dark-tan head made of fine bubbles that recedes to a collar very quickly. Aroma is heavy barrel; oak, warm bourbon, vanillin, hint of coconut in the back-end. Definitely Bourbon County. Slight cherry notes, a touch of oozing sweetness, although not as strong as I’d like it. Mild burnt brown sugar in the finish. Taste has much more cherry to it... Light tartness, jolting the taste buds; sweet cherries, sticky molasses & brown sugar, overly roasted malts, boozy bourbon soaked oak, dark chocolate fudge, faint vanilla. The cherries leave a chalky hint in the aftertaste; a sweet booziness lingering for days. Probably my least favorite Bourbon County variant to date. Not that it was bad... it wasn’t. It just didn’t tickle my fancy quite like the other ones did (especially the fruited ones).

From notes, consumed on 4/23/13. Bottle dated 11/12/12 poured into a snifter. Pours jet black with half a finger of tan head. Aromas of bourbon, chocolate, cherries, coconut. Tasting notes of chocolate, cherries, dark fruit, coconut, bourbon. Warm finish. Full body with a dry finish.

Pours a deep burnt umber color with a finger of khaki foam. The nose is cherry cordial slightly medicinal with a nice roasted chocolate background lots of bourbon character. The palate follows the nose but the cherry flavor is a touch weird like in the nose. The booze level is high and the burn is apparent from mid to late palate. Just disjointed... some good parts but the parts never really come together harmoniously.

Sampled from a bottle, this beer had a black-brown pour and gave a thin layer of tan colored bubbles that receded quickly to a few spots of bubbled islands and small ring, there was a few small spots of lacing as I drank, aromas of roasted malt, chocolate, whiskey liquor, chocolate, some prune and fig dark fruit with some cherry fruit in the background, a little chocolate cake, molasses and fruit sweetness, it had flavors of roasted malt, chocolate, cherry fruit, whiskey liquor with a little dark fruit, the finish had roasted malt and a liquor bite, the cherry fruit was more evident on the mouth than the nose, the mouth feel was full, it was a little creamy and coated the palate, there was some warming on the mouth and throat, it had soft to average carbonation, this was a nice Impy stout, it had a good mix of impy roasted malt, chocolate and cherry fruit with whiskey liquor, a very nice drink to be enjoyed on a cold Winter evening.

On draught at Smoke and Barrel during the 2013 Craft Brewer’s conference (as well as during Goose Island migration week). Better 6 months later.

On tap at Riverview. Poured pitch black with very thin ring of cream. Sweet cherry aroma but also slight sour. Very light carb med thick bod. Taste is a wonderful tart cherry and choc with bourbon hiding in the background.

On tap, pours pitch black with a light brown head and some lacing in the glass, looks like all the other bcs variants, aroma is crazy, tons of chocolate mixed in with the bourbon and vanilla from the barrel, the flavor is sweet on the front end with an awesome amount of chocolate with cherry in the finish, doesn’t come across as artificial though, bourbon is there but doesn’t over power it. Sweet, but that’s what you expect from this, nice.

Bottle thanks to a couple of great Ratebeerians! Pour is inky black with a small dark brown head that dissipates fairly quickly and leaves decent lacing. Aroma is wonderful, roast chocolate, cherries, whiskey, desert like. Flavor is even better, hitting all of those notes with medium sweetness. Whiskey notes present, as it a bit of woody tannins, but it blends wonderfully into the chocolate cherry goodness below. Medium plus body, creamy mouthfeel. One of the best I have had.

Thanks to Nicks6217 for the bottle Black pour, no head, small sliver of a collar. Lots of ABV legs Nose is roasted malt, chocolate, oak, bourbon and soft dark cherry. Nice nose. Taste is roasted malt, chocolate, vanilla, toasted coconut, oak, bourbon, and cherry. Cherry is a bit on the artificial side but it is not that bad. There is subtle spice from the rye and could use more I thought. Big feel, low carbonation. Slick, oily, and slightly sweet. ABV is well hidden. Solid beer with age

22 oz. bottle sample at Adam Jackson’s, huge BCBS vertical. Appearance is beautiful. Nose reallygets me excited to drink this. The dark chocolate stout notes with vanilla bourbon and a light tart cherry undertone. The alcohol is no longer detectable and makes for a great sipping experience. The flavor is a smooth balance of rye bourbon, vanilla, toasted oak, brown sugar, chocolate and the light tart cherry pie filling in the finish. I really enjoy how well this cherry is integrated into this stout. (not overdone or artificial) Gosh damn this is tasty! Love it.
