"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that itís a great cigar beer, but I havenít yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editorís Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. Itís essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Aroma is a little unpleasant with a mix of bourbon and chocolate. Taste is strongly on the bourbon side, with an aftertaste of sweet chocolate. Overall itís interesting, but not for me.

2015 bottle. Could easily pass for chocolate liquor. Tried it out because of the hype, I find it too sweet. While it feels smooth and oily with a warm aftertaste, thereís not a lot of room left for other details because of the sweetness. Wouldnít recommend.

This is over rated, over hyped, and way over priced. I cannot understand the huuuuuge following. I read/skimmed a thousand ratings of this and only found a few that made sense to me. Looks great. Ink black. Poured into a tulip with no head at all. Smelled musty. Taste was overly sweet and I wondered if it was attempting to be a sour gone bad. Compared it to Brer Rabbitt molasses and that wasnít it. Compared it to Sorghum and it was spot on except BCBS is much darker. Felt oily and syrupy. Looked for the strong bourbon flavor and alcohol that are mentioned in so many reviews, but donít find it. I like a good bourbon and this shows none of it. Lingering medicinal taste on the tongue. Iíll never recommend this to anyone and Iíll never purchase it again. Unfortunately I got caught up in the hype and have two more large bottles. Guess Iíll need to "share" them with our beer club or give them away.

2014 bottle shared. Thanks Gregg! Pours a jet black with a tiny ring of tan head that lingers for a little bit. Molasses, cacao nibs, vanilla, toasted caramel and bourbon notes dominate the nose. Light tobacco and soy sauce are in the background but fairly well-balanced and leans to the sweet side. Average carbonation and a chocolately finish with some warming bourbon notes. Fairly creamy on the palate as well with the vanilla notes shining. World class for sure.

On tap to mini snifter. Pours black, brown ring head. Aroma of chocolate, barrel oak, creme brulee, bourbon. The barrel flavor is huge but smooth and balanced.

Awesome stout. Tried multiple times. Barrel flavor is huge, a bit boozy and hot, dark chocolate, roasted malt, and everything good is in this bottle. 2009 vintage bottle was the best Iíve tried, and that bottle probably deserved a solid 4.7. But in average, I say 4.3

UPDATED: JUN 4, 2016 Pours cola black with thin head. Aromas of vanilla bean, cacao, caramel, and bourbon; this is truly incredible. Taste is nearly identical to nose, but so smooth and creamy that it shouldnít be possible. Vanilla, caramel, slightly smoky, the barrel-flavor present but not overbearing. Worth waiting for, and worth the price if you can find it.

Hazy, dark brown to black, thick and syrupy, flat, small to no head. Aroma is of brown sugar, molasses, caramel, some chocolate, roasted malt, strong vanilla and bourbon barrel, light alcohol. Taste is very sweet brown sugar, molasses, caramel and some chocolate, strong vanilla and bourbon, oak, roasted malt, medium roasty bitterness, some alcohol but mostly very well hidden, some warmth in the finish, long lasting aftertaste. Full bodied, flat, thick and bit sticky. (bottle from the brewery from a colleague who did some commissioning there)

Drank from a sample glass, shared amongst friends. Pours black, zero head. Amazing aromas of chocolate and caramel. Nice flavor, a bit of a burn from the bourbon but nothing extreme. Well done!

#3000, Bier ter ere van de geboorte van mijn kleindochter Sophia; Ze verkondigde zich gistermiddag tijdens UBFí16 al aan, en vandaag dan geboren, in blakende gezondheid een kleindochter...
en hoe mooi dat het dan ook samenvalt met nummer 3000 op Ratebeer...
nu moet ik zeggen dat ik dit bier al enige tijd geleden al had gereserveerd.... maar dat het voor mij ondanks de speciale gelegenheid ook aan alle verwachtingen heeft voldaan en/of zelfs heeft overtroffen.
Nog even dank aan de ratebeer clan van gistermiddag, anders was dit unieke moment niet mogelijk geweest, dus dank voor de top dag gisteren !

ok dan nu het bier: BCS 2015 variant, schenkt stroperig dik zwart met kaki kraag. Aroma van donkere chocolade, koffie, mout, geroosterd, en een heerlijke Bourbon.
Smaken zijn behoorlijk aan de dikke kant, romig mondgevoel, enorm veel donkere chocolade, behoorlijk zoet, enorm plakkerig, super zachte en gebalanceerde Bourbon, gebrande mouten, koffie, molasse, vanille, hout, zeer lichte bitterheid die in de afdronk erg zacht blijft mede dankzij de bourbon, volle body, zachte co2, smooth... werkelijk een fantastisch bier... zonder de speciale gelegenheid een 4.8 of zo... maar vandaag gewoon de maximale score !!!

A: Pitch black with a nice brown head N: Bourbon, coffee, vanilla, chocolate T: Vanilla, coffee, bourbon, molasses, caramel, liqourice O: Very thick and creamy mouthfeel. Excellent mouthfeel!
