COMMERCIAL DESCRIPTION
"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: DEC 21, 2012 2012 bottle. Pours a viscous motor oil black color with no head. Just coats the side of the glass with alcohol legs. Very little lacing. Smells of bourbon, oak, vanilla, dark chocolate, some coffee, like figs or raisins, maybe some soy sauce. Amazing aroma. Taste starts with lots of oak, rum soaked raisins, chocolate, some coffee, bourbon. Then turns a little bitter from the hop presence I imagine as well as more chocolate, dark fruits, and booze. Do get somewhat of a soy sauce taste at this point. Really smooths out at the end. More of the same flavors, but the creamy finish neutralizes the bourbon/booze presence. The booze is definitely there, but it blends really well with the other complex flavors. As it warms, the booze mellows out and you are left with a pleasant warming sensation. The finish makes it. Full body and very little carbonation. Oily and slick texture, but not sticky which is good for such a high alcohol beer. Very impressive imperial stout that is drinkable at 15% abv. Meets the hype in my opinion.

355 ml bottle. Pours black with a short lived beige head. Aroma is bourbon, wood, roast, dark chocolate and hazelnut. Flavor is dark coffee, dark chocolate, bourbon, wood, figs, dates, booze. Finish is boozey, roasted, coffeeish, black cherry. Lingering molasses flavor. Thick body, soft, oily mouthfeel, weak carbonation. Wow.

Bottle from Rainhall Drinks, Barnoldswick. 2008 Edition drank in 2014: Inky black with ruby red highlights and no head at all. It has a thick, oily mouthfeel with a very rich chocolate, liquorice and oak-whisky flavour, toasted vanilla and a very powerful warming alcoholic chocolate and whisky finish.

Je me gâte pour mon 700e rating! Bouteille 355ml, 2013, gracieuseté de biere_froide, merci Yannick! Couleur noire comme la nuit, mince collet de mousse moka fuyante. Arôme d’alcool, malt torréfié, boisé, noix de pécan. Goût de malt torréfié, alcool, chocolat noir, boisé, pointe de vanille, très sucré. Carbonatation faible, corps très dense, presque "mâchable", huileuse. Superbe stout impériale.

12oz bottle courtesy of CHI tasting crew 2013, shared @Tristate Tasting II, Freiburg. 2013 edition if I remember correctly. - Vanilla and dark chocolate fig compote perfectly contained by suave, near-leathery bourbon barrel tannins and make for very easy sipping. Lush dried berry aromas and dried toffee escape from the contained velvet creamy dark mass of all-encompassing vanilla bourbon as it warms. Late gentle hops join in the sweet butterscotch finish to round off this elegant, yet nearly mono-purpose dessert treat. #1600

12 oz bottle. Tasted on 8/7/14. Beer from my brother In law Chae thanks!!! Vintage 2009. The beer pours to a rich deep black color with almost no head. The aroma is overpowering with bourbon with slight coco & licorice. The taste is very rich & extremely complex. You get the bourbon on the front end followed by a rich chocolate & dark fruits finish. Bottle pour, 2013 vintage, black body with a ring of espresso colored foam. Aroma is raisin, dried plum, cherry, molasses, vanilla, bourbon. Taste is plum, raisin, cherry, BIG vanilla (but not that fake burnt flavor, good, rich, oaky), bourbon, molasses, black coffee, black malt. Palate is rich, but not syrupy, carbonation subdued. Warming, but not boozy, sweet initially, but the bitter finish is nearly perfect contrast. Just ever so slightly too sweet to be perfect.

UPDATED: JUL 26, 2014 Bottle 33cl @2ndTSRB, a dark beer with low head. Nose is on dark chocolate, oxidised, fig and prune, very nice. Aroma is very nice on dark chocolate, fig, sweet candied prune, round caramel, vinous, oak, vanilla, tannic, creamy, very complex, licorice. Exceptional brew, delicious, very long aftertaste on dark chocolate and fig notes, the kind of beer I like most.
