"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that itís a great cigar beer, but I havenít yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editorís Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. Itís essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: JAN 17, 2016 From keg on special Goose Island night. 10oz pour into snifter. Extremely complex beer. Notes of vanilla and other florals reminiscent of lavender. Sweet, but not cloingly (sp) so. Dark, but not thick. A true sipper. Not my favorite taste, but an amazing beer nonetheless. UPDATED: 2013 version, vanilla, molasses and alcohol nose. Half finger of dark foam, solid black with alcohol "oil" on top. Starts with molasses and raisins (dark fruit) up front, finishes with dark cherry and an alcohol tingle. Super smooth, super complex, and an absolute joy to experience. I enjoyed ?13 over ?12. UPDATE: itís the same as last year, and thatís a great thing! UPDATE: BCBS 2015. Kinda missed this year. Consumed with this yearís KBS head to head, and it lost hands down. As it warmed, it added in some of the complexity, but it was so, so, so syrupy and sweet. I would still have it over the vast majority of stouts out there. 8, 5, 7, 5, 16

Roasted coffee and bourbon notes waft from this obsidian beauty, which seems like the reason for Spiegelau's stout glass to exist. Rich mouthfeel, as light bubbliness plays out caramels to match the velvet burn. This is an amazing beer, well suited to lovers of Founder's seminal Breakfast Stout or Firestone Walker's Velvet Merlin. Thick mouthfeel. Motor oil flow with brown head. Burnt sugar aroma. Doesnít come off as overly sweet. Not boozy at all. Trail is raspberry and dark fruit. That said, I read some of this batch was contaminated, and I may be getting some of that -- maybe some rubber cement.

Rating #1655 - #CBC2015 Beer 40 - Day 4 - On tap at 10 Barrel Portland w/ Pours an opaque black beauty with a rich tan foam. Aroma is heavy roast malt, mild smoke, toffee , molasses, vanilla,oak. Taste is heavy on roast malt and coffee flavours, lots of burnt sugar, toffee, bourbon vanilla, blackstrap molasses. A lovely beer that hits on all of my favourite things.

A 1 pint .9 fl oz (500ml) bottle with a bottled on date of 22nd October 2015, poured into a snifter glass. It poured an extremely dark dark brown colour with a reddish hue on the sides. Dark tanned head was very thin and did not last long and there was some thin spotty lacing. Rich rich aromas full of bourbon, oak, caramel, salted chocolate and vanilla. Tastes much like the aromas. It was full of bourbon, oak, caramel, salted chocolate and vanilla. Stunning, heavenly goodness. Full bodied, thick motor oil like richness. Low carbonation. Nice light burn as it goes down. OverallÖ Wow, this was amazingÖ a brilliant sipper. Even drinking it 3 months in, aromas, taste and feel were already wonderful. It should develop more complexity with a year or two of aging, which is what Iím going to do with the rest of my bottles.

Black color. Dark, tan head that collapses rather quickly. Freckled lacing. Alcohol is really coming out in the aroma. Woody. Smokey. Vanilla. Chocolate. Blackberries. Charcoal. Creamy texture. Light carbonation. Taste like a smoked briscuit. Hickory and maybe some mesquite. Long smokey finish. Alcohol is more hidden in the taste than the aroma. Heavy body. This beer seems to stick with you well after the drink. Tasty.

Dark as night with low carbonation. The sniff test. Nice smoke, oak and bourbon aromas. From first to last sip. Viscous (10W30) chocolate, vanilla and tart cherry explodes in the mouth. As expected, alcohol is warming and provides balance. I was going to let this bottle age but Iím glad I didnít. Fantastic!

Look: almost black, opaque and clear. Aroma: vanilla, molasses, coffee with rum, Taste; sweet with prominent matured alcohol notes. Flavour: vanilla, wood, charcoal, prunes, pleasant mature alcohol. Very good and complex.

Pours jet black with virtually no head. Rich and complex aroma of bourbon, dark chocolate, oak barrel, coffee, roasted malts and some smoke. Very thick yet drinkable. Complex taste of chocolate, bourbon, coffee, liquor-like alcohol and malt that has a bitter-sweet finish. Really great multi-layered imperial stout.

The aroma of bourbon ad chocolate hit you first. It appears almost black with very little head retention, most likely due to the high alcohol. Btw this stuff stains the carpet. Taste/flavor, raisin coffee, chocolate, caramelized sugar note smash your faces and then a slight alcohol heat that is really unwanted. Again the alcohol burn ruins the palate. Understood this alcohol burn should be expected due to the high abv. But still a mellowing of this beer "aging" should be done. I Bet After 2 OR 3 Years. This will be amazing.
