COMMERCIAL DESCRIPTION
"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that itís a great cigar beer, but I havenít yet tried a cigar that would stand up to it." Brewmaster Greg Hall;
IBUís 60-High Color - Midnight
Was 11% abv,
2007 and 2008 - 13% abv
2011 - 14.5% abv
2012 - 15% abv
2013 - 14.9% abv

Editorís Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. Itís essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

2012 and 2013 were poured in a side by side taste test. A - Black as night with a dense dark mocha head that takes ití time going down. This coated my glass turning it brown. S - Bourbon, vanilla, dark caramel, loads of sweet barley, cherries, decadent chocolate, strong coffee, very rich aroma. More vanilla and cherry in the 2013. The 2012 had more of a leathery/melded caramel malt aroma. T - Big bourbon flavor, thick caramel with a hint of char, huge vanilla and amaretto flavor, aggressive whiskey soaked wood, a complex mix of cocoa, coffee, sweet dark fruit, alcohol was more evident in the 2013. The finish flashes all previous flavors with a nice whiskey roundness. M - The silkiest, smoothest beer Iíve had to date. Carbonation is medium to low with incredible creaminess. Heavy and viscous body coating the palate with a velvety feel. Wow! This is one of the best barrel aged stouts, if not the best Iíve ever had. Itís pure bliss. I liked the 2013 better than the 2012 but both were incredible. Highly recommended. Serving type: bottle 01-15-2014

Really incredible stout. The bourbon barrel aging REALLY brought out fantastic vanilla and molasses notes. Its runs smooth and oily over the palate and is lightly carbonated, which makes it easy to drink despite its ABV. Iíd attribute this in part to the malt flavor masking the alcohol. Disturbingly good and easy to put down at 14.2%!

Draft @ Crescent Moon. Aroma is bourbon, molasses, maybe a little rust. Jet black color, light brown head that linger around the edge. Flavor of molasses, touch of sweetness on the edge of the tongue, very nice bourbon flavor (not too much). Alcohol is well hidden. Very full bodied, low carbonation. Just slides down easily. Delicious imperial stout!

355ml Bottle from House of Trembling Madness in York (£7.80):
A big beer is every since of the word, this one was absolutely huge & in your face from the second I opened the bottle. I was worried going into this one that the hype might have ruined it for me or oversold it some but not at all, this one was almost perfect & up there with the very best of all the beers Iíve tried. The flavours & smell were wonderfully complex but fell short of being overpowering, the taste in particular being a real treat. Amazing stuff, Iíll definitely be picking up another couple bottle of this when I next see it in the UK; just incredible.

2013 Btl pours a used motor oil color,black and thick. Small brown head that vanishes quickly leaving specks of lace. Aromas of bourbon,toffee,raisins, wood,vanilla,alcohol,earth and a hint of charcoal. Tastes of bourbon,sweet caramel,vanilla,dates,molasses,woodiness and dark chocolate. Massive full body,chewy yet smooth mouthfeel, low carbonation(due to age?) and a sweet syrupy alcohol finish. An amazingly complex beverage that definitely gets better with some age. A beer that begs to be savored and coddled! Truly glorious!!!!

12 oz(2014) bottle pours dark black with a little head. Aroma is bourbon, oak and dark malts. Taste is amazing at first sip. Chocolate, bourbon, oak, vanilla, molasses and near perfection. A slight syrupy mouth feel. A descent burn at finish. It doesnít get much better than this. Near perfect impy stout.

Bottle to glass. Pours a deep brown to black color with a medium brown head. Aroma is light roasted malts, bourbon, vanilla, touch of chocolate. Flavor is huge bourbon, vanilla, with a nice background of light roasted malts. Not overly roasted bitterness. Lingering bourbon and vanilla. Fantastic as always! Although maybe a bit lighter than previous years.

Donít drink this if you do not like bourbon or stouts or bourbon. High abv is very prevalent. Should have let this one age. Drink at the right temp for full effect.
