COMMERCIAL DESCRIPTION
"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

22 oz. bottle- Pours black with not a great head, pours decent, then disappears fast. I taste vanilla and oak and some Bourbon but not as much as you would think, the taste is great but not as good as Ivan the Terrible, no one can beat Ivan dammit. This is the beer I drank directly after Ivan the Terrible.

12 oz bottle: Pours dark black with a thin light brown head. Small bubbles persist around the glass, and somewhat oily. Aroma of bourbon, charcoal, dark chocolate Taste is heavy on the bourbon but balanced well with a thick, viscous chocolate malt that is almost like drinking syrup. Very nice feel. Very enjoyable to drink with a slight burn. Not a bad burn perse, just powerful. Lives up to its reputation, I will try to age a few as well.

fresh, this beer is a bit much for me. It is big hot and very bourbon laced. I have collected several bottles of each vintage since 08’ and find they just keep getting better with age.

On tap at the Village Tap House in Chicago: pours jet black with a dirty, brown head.nice lacing. toast, oak, sweet bourbon, cooking chocolate, molasses, subtle dates. Taste is big bourbon, dates, figs, raisin, vanilla. Has syrup characteristics with a smooth, drinkability that makes this scary good. Reminds me of an Irish car bomb shot... with a long, distinct finish. Outstanding.

This beer is a great full-bodied stout. I could only have a few because it was so big and BLACK! but i really enjoyed it and would drink it again as a dessert to a meal of steak and spuds!

Pour is jet black with a small tan head. Nose is of roasted malt and some bourbon in the nose as well. The taste is of vanilla, oak, dark malt and bourbon, and some chocolate of course as well.

Aroma: lots of rich chocolate and caramel, molasses, toffee, sweetness, some coffee, notes of bourbon, roast malts. Pours jet black, opaque, thin brown head from an aggressive pour dissipates almost immediately, very little lacing. Flavor: chocolate, rich and sweet, caramel, medium-high bitterness, robust roast character, touch of oak, bourbon, warming alcohol and a bit boozy. Palate: very full body, low carbonation, thick and silky, fairly sweet finish. Nice brew.

2011 bottle at home. Pitch black, viscous pour, no head. Massive rich nose of bourbon, vanilla hints, chocolate, booze also present. Sweet rich palate, milk chocolate, really smooth bourbon, hint of coffee, big booziness, super-smooth but incredibly rich. Notes of toffee and marzipan also. Sticky rich finish, big alcohol hum. Incredibly, ridiculously unbalanced and sweet, but still great in its own way. Looking forward to trying my aged version.

UPDATED: MAR 18, 2013 (2012 vintage; 35 cl bottle from Høkeren) Pours black with little, toffee head that diminishes quickly. Poor regeneration and little lace. Potent, perfumy aroma of oatmeal, vanilla and coffee. Soft carbonation, creamy texture, full body and a strongly sweet, warming finish. Taste is mostly sweet and slightly buttery. Alcohol is very well integrated. Very dominant yet pleasant. (2011 vintage; Saved this for my rating #500 - courtesy of Steasy66 - big cheers!) Pours black with medium, coffee head that dissipates quickly leaving a bit of lace. Aroma is smooth malty with notes of bourbon, confectionary, coconut, vanilla and oak. Very inviting and accessible. Viscous, creamy texture, full bodied, flat and with a warming, wooden tobacco-humidor finish. Taste follows the nose and is rather more sweet than roasted with the alcohol extremely well integrated. Quite special and dangerously seductive.

12 ounce bottle. This was a thoroughly enjoyable beer that didn’t taste at all like 15% abv and still had copious amounts of coffee, malts, cocoa and coffee beans. Plus, it didn’t go overboard with the bourbon flavor. It’s pitch black, motoroil-heavy bodied, and puts off a welcoming, roasted wood and slightly sweet aroma. All around a solid beer and one of the best I’ve had in the no man’s land that is >12%abv country. This is an excellent beer to settle in with during or after a big meal. The slightly sweet, malted, roasted flavors would pair nicely with some turkey and stuffing, and it tastes appropriate as a goodbye to fall and a hello to winter. In other words, I recommend a bottle of this for Thanksgiving.
