"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that itís a great cigar beer, but I havenít yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editorís Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. Itís essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

My rating no. 1360, bottle obtained from porterhouse - thanks, Kevin! Bottled 8/16/05, drunk 9/30/07, fill line is high, right up on the crown. OMG huuuuge syrupy, medicinal chocolate and bourbon nose, loads and loads of non-roasted malt filling the room. Lesser notes of vanilla and wood, a touch of soy with some alcohol leaking in. Bourbon tends to dominate the other notes. Silky, soul-sucking black pour, opaque pitch resting body with a lacing, rocky, and tiny-bubbled dark brown head - gorgeous, dense stuff! Flavors only intensify with warmth. Taste is fat malt and predominately sweet bourbon, light wood to compliment and vanilla that sticks to the teeth and gums. Chocolate and light notes of roast. Touch of sweet burn (as the charred innards of a barrel might taste). Obesely thick body, very smooth, syrupy with slight pricking in the beginning and at the end. A long, really pleasant warming that settles in and wraps around you like a familiar blanket. I suppose this goes under ístraightforwardí rather than ícomplexí, but the designationís not used pejoratively. Definitely a sipper (a bit of a kick to the face at times). Rich, relaxing, and - most importantly - a lot of fun!

Have to wonder if the roast was much stronger when this was fresh and just died over the last two years, or if this is the finished version.

Had a bottle of 2015 thanks to jerkane. Good chocolate, coffee, and bourbon flavor. A little overhyped IMO.

2015 bottle, bottled 18 September. Pours viscous black, small brown head, no lacing. Aroma is raisins, campfire, bourbon, vanilla. Flavor is much the same. Sweet, boozy, warming, not hot, the alcohol is very well hidden. Can you call a 14% beer drinkable? This one, you can. Complex, exceptionally well balanced. Will have to grab a few more bottles to age, if I can hold out.

AROMA Bourbon, pitch and ethanol followed by chocolate milk, chocolate syrup and baking chocolate. APPEARANCE Black coffee with dense chocolate milk head. Just a trace of lacing with very brief head retention. TASTE Chocolate, unbleached cane sugar, maple syrup, and a hint of buttercream. Unexpectedly sweet with bourbon and alcohol burn on the finish. PALATE Heavy, malty, rich, well carbonated, coats the mouth and hangs on a good long time after a sip. OVERALL Very well integrated, complex, sweet, dessert-like, thoroughly drinkable. An unmistakably sweet beer, balanced with malt, roasty coffee bitterness, rich creamyness and lingering bourbon heat. Packs a punch, so much going on and so many contrasting elements to enjoy. A renowned beer worthy of the considerable praise heaped upon it. Great stuff, love to try some of the limited variants some day.

Excellent in every way except I donít understand the difference in ABV. My bottles are saying 13.7 ABV which is a far cry from the listed 15 % Iím still happy with what I have...just puzzled. This is one of my first purchases of a new release and itís quite exciting in itself.

I consider this to be the filet mignon of beer. Or at least stouts. Very smooth, especially if aged, chocolatey, Carmel, amazing!!! ---Rated via Beer Buddy for iPhone

Finally getting around to rating this. Snifter at the source in Chicago for a late bday Rare Day tix I got to buy for Adam and myself. Iíve had this a lot. Dark brown with caramel head. Aroma is bourbon and dark chocolate and some vanilla. Taste is not-too-bitter dark chocolate. Bourbon is underlying but present and notable. Not overwhelming. I love this stuff. Cheers to BCS hunting 2015 in a few weeks!

Enjoyed this every time I have had it. Recently after bottling, after 3 months, after 6 months etc. Just wish it wasn't owned by InBev but I'm still not complaining.
