COMMERCIAL DESCRIPTION
"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences seperates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

Bottle 355 ml. Pours black with a small, dark brown head. Lots of oak in the aroma, vanilla, dried fruits and bread. Sweet to the taste, oak, vanilla licorice and dark chocolates. Nice, but a bit to sweet.

HUGE beer, lot going on and it all works great together.. very thick oily body, can feel the richness... Flavors of vanilla, bourbon, sweet bbq, oak all come through and very well balanced. ABV is high at 15%... so much going on in this beer. Can’t say enough about it.

10 oz. snifter on draft at Beechland Tavern in West Hartford, CT. Starts off with a brown fluffy head which diminishes quickly after first sip or 2. Color is onyx black like you would expect. Sells really roasty, spicy and chocolatey. Taste is complex and roasty lots of dark chocolate, caramel, not much coffee which I don’t mind. I found it to be a bit on the sweet side, especially when it warmed up. Smell of alcohol was present but no alcohol burn going down. Mouth feel was a little disappointing, once the head evaporated it became almost flat. I gave it the snifter swirl and couldn’t regain any carbonation. I’ve had this in a bottle before and remember it being better then. I have 5 left in my basement, so I may rate this again in 6 months or so it gets to be a year old.

2012 vintage. Pours dark black with almost no head what so ever. Aromas of big bourbon with oak, caramel, and mild hint of vanilla. Flavors of medium sweetness with the mild burn on the finish from the booze.

Really nice deep coloured stout with a small dark brown head that dissipates quickly. The bourbon aroma hits you pretty quickly but you also get a hint of the maltiness in the back ground. On drinking its very smooth with a slight sweetness that turns into the deep bourbon and malt flavours, there’s a slightly salty finish to it too which is quite nice.

bottle, 2012 vintage. strong oak chips, vanilla bourbon nose, signaling the onslaught of flavors to come (and it’s still cold!). body very oily, tar like thick. sweet vanilla, wood, roasty bbq sauce, boozy breath. this is a very big, heavy beer.

This is the best stout that I have had... And I have drank A LOT of beer. BC pours a deep black with a small tan cap. The aroma is bourbon and chocolate. Flavor is amazing. Starts with a bold bourbon kick and then followed with notes of chocolate and espresso. It finishes sweet and with a subtle hit of alcohol. This is exactly why Goose Island is so good at what they do. ---Rated via Beer Buddy for iPhone

I’ve had this a number of times and I’m staring at a glass right now. Surprised that I haven’t rated it before. The pour is dark black. It does look brownish and a bit transparent towards the rim when you tilt the glass. Not much head but it’s there. It lasts too. Carbonation level is perfect on the palate. Smells woody, roasty, and bourbonesque. Dark fruits, chocolate, coffee, and mocha. Tastes strong but heavenly. Begs you to sip it. For 15% it is pretty smooth. The alcohol simmers a bit in my stomach but I don’t taste much heat. Great beer. Amongst the best Imperial Stouts in the world hands down.

Bottle of 2012 vintage, pours thick and black, no head despite best efforts. Little to no carbonation, in fact no lacing or bubbles at all. Smell is lovely; raisins, caramel, a little coffee, and boozy! Punchy oak and, of course, bourbon hit immediately. Can taste the 15% moreso than others I’ve had of this strength. It’s nice, very nice, but I’ve had better (and no sign of the ’thick foam’ from this bottle).

Draft at Eulogy. 2012 vintage. Snifter. Poured pitch brown with a dark brown head that quickly reduced to a foamy ring. Flammable dark fruit off the top. Intense Bourbon flavors. Raisins. Dates. Prunes. Molasses. Liquorice. Not a typical stout. Some slight dark chocolate and a bit of smoke but no particular coffee, ashy or leather notes. Mostly deep rich complex brown fruit swimming in Bourbon. High ABV is not hidden. Heady and dizzying at 15%. Keep away from open flame! Need I tell you this is wonderful stuff!
