We loaded a big Imperial Red with all of our favorite hops at the moment to make a mouth blistering 90 IBU treat. Columbus, Simcoe, Sorachi Ace, Citra, and Amarillos are layered in an absurd amount of hopping positions to give this brew an unequalled hop complexity.

On tap at Sheffield’s listed as Second Star. Citrus sweet malts doughy bright and nice. Sweet malt flavors: citrus grapefruit dough and bitter. Really drinkable solid beer. Its good for getting off the ancho crack for a few minutes. 8/3/8/3/15

Draft at Sheffields (Chicago, IL). Pours a glowing reddish copper, darker and well hazed with a small offwhite lacing head. Aromas are dry florals and grapefruit, a touch of lemon, crisp crystal sweetness, bread, toffee, biscuits, dry lemon peel. Initial is medium bodied with biscuits and a big blast of grapefruit. Florals, lemon, caramel, toffee, a touch of grass. Finish is dry, some soap, grass, light citrusy life. Some thicker bread and toffee, florals and lemons, grass, faint pine. Not as intense of a bitterness, but quite pleasant. A balanced Imperial Red, one of the better I’ve had but not a style I love. Lingering toast and bitter hops, yet more subtle and earthy with some light lemon. Nice.

Sample at Goose Island Clybourn. Pours clear amber with a medium off-white head. Piney and spicy hop aroma with subtle traces of malt. Caramel malt flavor with piney and earthy hop flavor and subtle citrus.

On tap at Goose Island Clybourn. Pours a hazy copper with a medium sized white head. Big sticky citrus and large pine, very fresh and clean. Smooth and sticky, great malt character. Nice slow grapefruit bitterness on the finish. Really good.

UPDATED: SEP 25, 2010 draft at cly, pours hazy light amber with white head. nose has a good dose of piney hop notes with big sweet caramel malts. flavors are sweet, caramelly, with some attempt at balance with some grapefruit and piney hop notes. this is just underattenuated, heavy, boozy finish, sort of a mess. 3.2. draft at Sheffields, listed as Second Star. Perhaps an improved/tweaked version of Chicago Star. p red copper small head nose floral pine grapefruit fl piney dry grapefruity really dry gfruit rind finish seems like a pete crowley over hopped brew, killer and dry. GI has had trouble with big hoppy reds in the past but they got things right here.
