Commercial Description:
To help break the curse on the Cubs we brewed this light-medium bodied porter. The black malt contributes to a brew that is dark in color, yet mellow in flavor - with hints of chocolate - and a clean aftertaste.

All the porter flavors are here...chocolate, coffee, sweet roasted malts...but just so watered down, to the point of being insubstantial. I drank it and immediately forgot that I had.

Draft at GI - Clybourn. Poured a medium-dark brown with a short-lived cap of beige head. Aroma was of sweet chocolate and fruity sugars.. pleasant, but felt artificially-sweetened. Flavor was of sweet caramel and chocolate with light roast to it.. mild herbal bitterness and an odd caramelly-soapy finish. Light-medium bodied and grainy across the middle with a tacky finish. This was powerfully OK.

Clybourn. Opaque to midnight-brown in color with a touch of translucency at the edges and a thread line wrung to serve as the head. Malted milk balls and a moderate mocha bean aroma do little to segment anything special. Gentle brownies and Symphony chocolate bars reflect only a tiny notion of bitterness. Light, loose and thin, though no acidity to make it more disparaging. Carbonation edges a bit with a wishy-washing mocha porter bannerman stance. Thematic of a brew pub porter, with a dry semi-sweet chocolate brownie base. Some suckage of said mocha beans and diluted skim chocolate milk do what they can with the finish.

(Draught) Pours a burgundy body with a small creamy tan head. Aroma of toasted malt, chocolate, and caramel. Flavor of roasted malt, chocolate, and a hint of licorice. Smooth and creamy mouthfeel.

clyborn, a while ago. pretty dark, i was surprised by a low viscosity. good example of a porter i’d say, but nothing exceptional.

On tap at GI, Clybourn, 4/30/2005. Poured dark brown with a creamy tan head. Some roasted nuts in the aroma along with a touch of sourness. Nutty, smokey flavor with the sourness from the aroma carrying over into the flavor as well. A bit dry in the finish.

This disappointed me after the pour, a deep brown color with ruby highlights and a rocky cocoa head. The very aroma was watery - dark malt with a smattering of coffee and a dollop of chocolate. Thin. The taste was fine - sweet malts, chocolate, coffee, vanilla - but weak. Very clean finish.

Not much to say about this one. It’s a porter through and through. Dark, some hints of chocolate, vanillla, a bit of sourness. Average mouthfeel. Pretty good porter.
